This Chicken Apple Sausage recipe makes meal prep a breeze and is perfect for grab on the go breakfast!
With two littles kids in preschool, one of the biggest challenges of my day involves getting two toddlers dressed and out the door on time.
Side note – why is there always one shoe that is nowhere to be seen? You would think both shoes would be together, wherever they are flung off or thrown. Nope.
So anyway, after locating the inevitable missing shoe, there is little time to prepare breakfast before rushing out the door.
Quick & Easy Breakfast on the Go
I typically make these Spinach & Tomato Egg Muffin Cups on Sunday to carry me through the first couple days of the week. However, repetition can get boring.
I wanted something substantial but hearty enough to get me to lunchtime. A breakfast I could grab on the go and eat while shuffling the kids to school.
This Chicken Apple Sausage recipe is the answer to my hectic morning prayers.
It’s easy to make, takes only a handful of ingredients and can be made in advance. The ground chicken is lean and a good source of protein. The combination of sweet, crunchy apple and ground sage gives it enough flavor to be a delicious way to start your day.
One pound of ground chicken makes about 4 sausage patties. I have started making them on Sunday and then grabbing 1 or 2 in the morning, throwing it in the microwave for a couple seconds and heading out the door. Breakfast of champions.
Variety is the Spice of Life
I’ve also been eyeing these Healthy, Hearty Breakfast Cookies from Kitchen Window Clovers. They are basically a bowl of hearty oatmeal baked into one easy to grab cookie!

Chicken Apple Sausage
Ingredients
- 1 lb ground chicken
- 1 small apple I typically use granny smith, but any variety will do, diced
- 1/2 tsp ground sage
- salt and pepper to taste
- 1 tbsp olive oil
Instructions
- In a large bowl, combine ground chicken, diced apple, ground sage, salt and pepper
- Combine until well mixed
- Use hands to form 4 patties
- Heat 1 tbsp olive oil in pan over medium heat on stove
- Add chicken patties to pan and cook for 3-4 min each side
- Remove from heat and Enjoy!
Apples are an excellent way to keep ground chicken moist… not to mention it just tastes great! Adding a few fennel seeds also adds great “sausage-y” flavor!
