I can remember the first time I hosted Thanksgiving dinner.


I was 24 years old and my boyfriend (who is now my husband) and I had recently moved in together and decided it would be fun to have our families over to celebrate.

It started out simple enough, just our immediate family members, which came out to about 11 people.

Then it grew and took on a life of it’s own. Before I knew it, there were 33 people coming to our tiny house! I had to rent tables and chairs, borrow silverware and basically learn how to cook.

Come turkey day I was overly stressed, had multiple meltdowns and couldn’t figure out which side of the turkey was the top. I didn’t relax unit every single guest was gone.

I’m happy to report that since then I’ve hosted many meals at my house (never for quite so many people) and have learned to go with the flow a bit more.

One of my best pieces of advice is to pick a few dishes you can make in advance, like this cranberry salsa. It makes a great appetizer and can be made days in advance. You can serve it with crackers, chips, as a dip for veggies, or even just put on the thanksgiving table as a side dish.

It takes less than 10 minutes to make, requires only 6 ingredients and you can use frozen cranberries! Plus cranberries can help provide vitamins, minerals and antioxidants that can help reduce the risk of cardiovascular disease, heart disease and some forms of cancer. Delicious & Nutritious = a happy Thanksgiving.

Even better, this cranberry salsa tastes fantastic on leftover turkey sandwiches the next day or say served on top of these creamy Cauliflower Mashed Potatoes. Leftovers are one of the biggest reasons I like hosting Thanksgiving dinner!

Cranberry Salsa

Tangy and zesty, this cranberry salsa is simple and delicious making it the perfect appetizer or side dish.

Ingredients

  • 2 cups cranberries frozen or fresh
  • 1/2 cup cilantro
  • 1/3 cup green onions chopped
  • 1 jalapeño chopped (remove seeds for less spice)
  • 2 tbsp honey
  • Juice of 1 lime
  • 1/4 tsp salt

Instructions

  • Place all the ingredients in a food processor and blend until chopped and combined.
  • Serve as a dip with crackers, chips or raw veggies. Or serve as a side dish at your meal. Makes great leftovers and tastes amazing as a sandwich spread.
