Farro – A Mediterranean Diet Grain
Farro is an ancient grain that is rich in fiber and magnesium. It’s savory and slightly nutty flavor, making it perfect for salads, soups and side dishes.
The whole grain variety of farro is a part of The Mediterranean Diet that can help reduce the risk of heart disease and type 2 diabetes when part of a healthy diet.
Plus it’s delicious – I should have led with that.
Fast Cooking Farro
The only trouble I ever had with farro is that it can take up to 30 minutes to prepare. Which is fine if I prepare in advance but let’s be honest, that doesn’t always happen.
So today, I’m sharing one of my newest discoveries and obsessions with you. This 10 minute farro from Trader Joe’s.

Favorite Farro Recipes
Farro goes so well with so many dishes.One of my favorite ways is to simply cook farro in vegetable broth and serve with grilled salmon with fresh herbs like dill and basil.
This Fig Balsamic Farro with Spinach, Cranberries and Almonds recipe from Queen of My Kitchen is on heavy rotation at my house. I use regular balsamic vinegar glaze in place of the fig balsamic the recipe calls for and it turns out beautiful every time! This is a great weekday lunch option because you can make it in advance.
I also love this Farro Tabbouleh with Feta from the amazing Ina Garten. The combo of herbs and nutty farro are just so satisfying and filling.
