Pleasing Others Isn’t Easy
It’s funny how much my grocery stores purchases are regulated around who likes what. For example, Dan doesn’t like fruit (except the occasional piece of pineapple or raspberries, which no one else likes). Race likes grapes, but only the green ones. Or maybe it’s the purple ones, I can never remember and 50% of the time I end up buying the wrong ones anyway.
Pineapple is one of the only fruits that all 4 of us like. So to make it easier on myself, I try to always pick up some at the store.
And a little truth time – I buy the pre-cut pineapple from Safeway because 1) I absolutely hate cutting pineapple and 2) it has been so juicy and ripe lately. I know it’s way overpriced but that’s life sometimes.
A Salsa for Everything
Another little confession – I don’t really care for regular salsa. I’ll eat it if it’s put in front of me, but I would not go out of my way to buy salsa at the store. It’s just not something I would ever really choose to eat.
There are many times though that I have a dish that would benefit from a little extra sauce. Grilled chicken, roasted fish, baked veggies – sometimes these can be a bit bland and having a salsa to toss on top of it would be very handy.
Pineapple Salsa 2.0
Last year, I shared this Pineapple Jalapeño Salsa recipe that I use a lot on fish and chicken.
However, I wanted to create a similar one that wasn’t spicy so that my kids could enjoy it as well.
This Pineapple Salsa is the answer I was looking for. Simple and full of flavor, I subbed cucumbers for jalapeños and the end result is a tangy and refreshing salsa that goes well on a number of dishes.
Ways to Enjoy Pineapple Salsa include –
- on topped of grilled chicken or fish
- served with avocado and hard boiled egg for a quick lunch/snack
- on crackers or chips
- fish tacos
Pineapple Salsa
Ingredients
- 2 cups pineapple, diced
- 1 medium cucumber, peeled and diced
- 1/4 red onion, diced
- 2 tbsp cilantro, chopped
- 1 lime, juiced
- salt and pepper, to taste
Instructions
- Add all the ingredients in a medium bowl and stir to combine. Season additionally as needed. Use right away or store in fridge for later use.
