Nachos with a Mediterranean Twist

Nachos are always a good idea.

First of all, you eat them with your hands. Enough said on that. Secondly, you can pretty much throw almost any ingredients on top of a pile of chips and they will be delicious. Especially if cheese is involved.

These Mediterranean Nachos are a perfect example. Crispy Lavash chips topped with traditional mediterranean flavors like hummus, olives, and feta.

It’s no secret that I’m a huge fan of California Lavash. I love their flatbreads and have used them numerous times to make these Savory Lavash Crackers.

Their flatbreads are so versatile and are perfect for wraps, pinwheels, flatbread pizza, chips, tuna melts and paninis. They have a ton of great recipe ideas on their website . I constantly look at their recipes for inspiration and meal ideas.

They are a family owned bakery and use age-old baking methods that require time, patience and expertise. Their breads are vegan, non-GMO and have no artificial preservatives.

I used their traditional flatbread lavash in this recipe to make a delicious substitute for tortilla chips. Their lavash can be found in the bread aisle at many grocery stores (like Safeway, Whole Foods and Sprouts) or can even be delivered right to your door using Good Eggs. Their website has a handy store locator to find a store near you that carries them.

Piling on the Toppings

I’m not going to lie, the best part of nachos is that they are messy. To put them together, you don’t need finesse. You just pile on the toppings.

To construct these Mediterranean Nachos, I used the following ingredients for a delicious greek twist on a classic.

  • California Lavash Chips – crispy, crunchy and seasoned with paprika and za’atar. Lavash makes the best base for these nachos.
  • Hummus – creamy and hearty, classic hummus helps all the delicious toppings stick so each bite is flavor packed
  • Ground Lamb – lightly seasoned with basil and oregano, lamb adds the perfect touch to make these nachos a whole meal
  • Cucumber Relish – instead of salsa, these nachos get a refreshing crunch from diced cucumber, red pepper and red onion.
  • Olives & Feta – mediterranean nachos just wouldn’t be the same without these classic ingredients
  • Tzatziki – this creamy greek yogurt tzatziki dip is the perfect replacement for traditional sour cream on these nachos
  • Pepperocini – I don’t like lot of spice so these pepperocini are one of my favorite nachos toppings without a lot of heat

Mediterranean Nachos with California Lavash

Ingredients

California Lavash Chips

  • 4 sheets California Lavash flatbread
  • drizzle Olive Oil
  • 1 tsp Smoked Paprika
  • 1 tbsp Za’atar

Nacho Toppings

  • 1 lb ground lamb
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 cup hummus
  • 1 medium cucumber diced
  • 1 red bell pepper diced
  • 1/4 red onion diced
  • 1 tsp olive oil
  • salt and pepper to taste
  • 1/4 cup olives kalamata or your favorite type
  • 1/4 cup feta cheese
  • 1/3 cup tzatziki sauce
  • 3-4 pepperocini for garnish

Instructions

For the California Lavash Chips

  • Preheat oven to 400 degrees F
  • Cut each lavash sheet into thirds, then rotate and cut each third into thirds again, so you are forming small squares/rectangles. Cut each rectangle diagonally to create triangles that resemble tortilla chips
  • Lay in a single layer on a cookie sheet and drizzle with olive oil, paprika and za’atar
  • Bake in center rack in the oven for about 5-8 minutes, until golden brown and crispy.
  • Remove from oven and allow to cool slightly before use

For The Lamb

  • In a frying pan over medium heat, add the ground lamb, dried basil and oregano. Cook until brown and fully cooked, about 10 minutes. Remove from heat

To Make the Nachos

  • Place lavash chips on the bottom of plate/bowl
  • Top with hummus and ground lamb
  • In a small bowl, combine chopped cucumber, bell pepper, and red onion. Drizzle with olive oil and season with salt and pepper. Stir to combine and then add this cucumber relish to top of nachos
  • Top with olives and feta
  • Spoon tzatziki sauce into middle of nachos
  • Garnish with pepperocini and enjoy!
