BBQ Season is quickly approaching and I could not be more excited. I love a good cookout, especially when it comes to the side dishes.

Potato Salad is like side dish royalty. There is always one (sometimes multiple) at most backyard barbecues. Since The Mediterranean Diet focuses more on fresh, lighter ingredients, I wanted to share a mayo free potato salad recipe that everyone will love.

This Lemon Ginger Potato Salad takes an old classic and puts a zesty twist on things with a unique ingredient.

Tea Infused Potato Salad

To infuse the maximum amount of flavor into this potato salad, I started by cooking the potatoes in Stash Lemon & Ginger flavored tea.

Personal Tip – I like to cut my potatoes before boiling them because I think it’s easier trying to wait for them to cool and then cutting. Plus they cook faster if you cut them before.

Before draining the potatoes, you also want to save about 1 cup of the starchy, tea infused cooking water. It gets added to the sauce to give it a thick, creamy texture and also more flavor.

Zesty Lemon Ginger Sauce

To add lots of flavor to the potato salad, I blended together fresh ingredients like parsley, cilantro, green onions, and garlic. To create a creamy based sauce, I added dijon mustard and some of the lemon and ginger tea infused cooking water. The result is a creamy, herby, flavor packed sauce that the potatoes practically absorb like a sponge.

The Lemon and Ginger flavored tea adds an extra brightness and hint of zest from ginger at the same time. It works so well with the other flavors in this potato salad recipe.

Lemon Ginger Potato Salad (no mayo)

Ingredients

  • 6 Stash Lemon and Ginger flavored tea bags
  • 2 quarts water
  • 1 pound red potatoes sliced
  • 3 stalks celery diced
  • 4 green onions chopped, divided in 2 portions
  • 1/4 cup parsley roughly chopped
  • 2 cloves garlic peeled, roughly chopped
  • 1 inch piece of fresh ginger peeled, rough chop
  • 2 tbsp dijon mustard
  • 1 lemon zested and juiced
  • 1/4 cup olive oil
  • salt and pepper to taste

Instructions

To Cook the Potatoes

  • Fill large stock pot with water and bring to a boil
  • Once boiling, reduce heat to low and add Stash Lemon and Ginger Tea bags
  • Allow to steep 3-5 minutes, then remove and discard tea bags
  • Add sliced red potatoes directly to tea infused water and return to a boil
  • Once potatoes are done (fork tender), save 1 cup of tea infused cooking water for dressing. Drain potatoes and allow to cool
  • Once potatoes are cool, place in a large bowl and add chopped celery and 1/2 of the chopped green onions
  • In a food processor, blend parsley, remaining green onions, ginger and garlic until finely chopped but not completely pureed
  • Add dijon mustard, lemon juice, and olive oil and puree until blended
  • With food processor running, slowly add tea infused cooking water. Continue slowly adding until sauce is emulsified (about 1/4-1/2 cup cooking water typically)
  • Taste and season as needed with salt and pepper
  • Pour sauce over potato salad and mix well
  • Garnish with lemon zest and a little more chopped parsley and enjoy!
