I’m bringing back my Friday Favorite Series. I don’t know about you but I love seeing people recommend new favorite items – recipes, ingredients, spice, etc.
So each week I’m trying to share a new “favorite” of mine. It can be a simple ingredient that I’ve been loving or a favorite recipe I’ve been making at home.

Healthy Afternoon Snack
I’m pretty good at meal planning each week for lunch and dinner ideas. We don’t always follow the plan 100% but for the most part it runs pretty smoothly.
Since my kids have gone back to school, I’ve been trying to follow a dedicated schedule to work on expanding The Domestic Dietitian. However, with 3 different school drop off/pick up times sometimes I find myself needing a quick and simple healthy afternoon snack.
When pressed for time, I don’t want to grab something like pretzels or an apple that will just leave me hungry again in an hour. Instead, I wanted to plan a few snack that meet the following criteria –
- quick and simple
- flavorful (otherwise what is the point?)
- a bit of healthy fats and protein to keep me full
- can be eaten in the car during school pick up
Hardboiled Eggs with Pesto
In as little as 11 minutes, I can hard boil a few eggs on Sunday and have them in the fridge for weekday snacks.
But I find plain old hardboiled eggs to get a little boring after awhile. So one day I added a spoonful of this Vegan Kale, Cashew & Basil Pesto from Trader Joe’s.
Game changed!
It was so good! I just used it straight out of the fridge (i.e. cold). It was flavorful and perfect with the hardboiled egg.
Vegan Kale, Cashew & Basil Pesto
This pesto from Trader Joe’s has been a favorite of mine for months now. It is absolutely so full of flavor. It tastes great on pasta, fish, chicken, steak, shrimp, and (obviously) hardboiled eggs.
As with all foods, I like to look at the ingredient list. This pesto is made with real ingredients, which is something I strive for. The ingredients include –
- kale
- olive oil
- water
- basil
- cashew butter (made of cashews, sunflower oil)
- garlic
- lemon juice
- sea salt
- black pepper
Simple ingredients, tons of flavor. You know what you are getting with this pesto.
