Delicious and convenient, this Slow Cooker Fajita recipe is a mediterranean-diet inspired dish that is perfect any night of the week.
Break Out the Crock Pot
Two things tend to happen at my house once November hits. First, I switch up my sweaters to prime closet shelf space (sorry sleeveless shirts, it’s bottom drawer status for you). Second, I break out the old crock pot and store it on the counter.
I don’t know about you, but fall and winter just scream crock pot meals to me. The kind where you throw all the ingredients in when you get up and then get teased by the heavenly aroma of it cooking all day.
Mediterranean Inspired Convenient Meals
This fajita recipe really hits all the major checkboxes for me –
- mediterranean “inspired” (lots of veggies, spices in place of sauce)
- convenient and easy to make
- budget friendly
- family friendly
The crock pot makes it easy to create without a lot of steps involved. I also used a complete time saver – precut vegetables. I know it costs extra but I got this pack of already sliced onions and bell peppers for $5 at the grocery store. Sometimes you just need all the shortcuts you can get and that’s perfectly fine in my book.
Slow Cooker Fajita Recipe
I used chicken in this recipe because I had some on hand from a previous recipe. However, you could easily use a different ingredient – steak, fish, shrimp, or even keep it vegetarian.
Slow Cooker Fajitas
Ingredients
- 1 can Diced Tomatoes (15.5 oz can) do not drain
- 1 Onion, sliced red or white onion, or 1/2 of each
- 2 Bell peppers, sliced
- 4 Chicken breasts or thighs, sliced into strips boneless, skinless
- 2 tbsp Taco Seasoning
- 4 Tortillas
- Additional Garnishes – guacamole, salsa, shredded lettuce, etc
Instructions
- Place the jar of diced tomatoes in the bottom of the crock pot, including the liquid
- Place the sliced chicken, onion and bell peppers on top of the diced tomatoes
- Add 2 tbsp taco seasoning and lightly stir to mix together
- Cover and cook on high for 2 hours or low for 4 hours
- Once done (chicken is all the way cooked through) serve immediately on tortillas and desired garnishes.
