Everyday Examples of The Mediterranean Diet
One of my goals is to share more realistic, everyday examples of how to fit the Mediterranean Diet principles into your lifestyle.
Earlier this week, I shared a recipe I made for lunch from Michael Symon’s newest cookbook “Fix It with Food“.
It was a farro salad that I really enjoyed and (if you watched my Instagram stories) my husband thought was “ok”. A stellar review if you ask me.
As I was enjoying it, I realized that the salad was a perfect example of a Mediterranean diet inspired dish.
What Made it Mediterranean Diet Inspired
The dish is a mixture of deliciously nutty farro, fresh greens, fruit, and toasted pine nuts. It’s simple, hearty and full of antioxidant containing ingredients.
I used one of my favorite ingredients from Trader Joe’s – 10 Minute Farro. It’s cooked in a mixture of water and orange juice, infusing even more flavor into the whole grain.
The salad is then a build with other simple, fresh, amazing ingredients –
- Green leafy spinach is the main component of the salad, providing antioxidants, iron, and fiber
- Fresh fruits like blueberries and apples (the recipe originally called for peaches but they aren’t currently in season) offer natural flavor and sweetness without added sugars
- Fresh herbs like basil are mixed in with the greens to provide extra flavor and freshness
- A bit of toasted pine nuts are sprinkled over the top to give crunch, as well as a dose of heart healthy fats and fiber
- The dressing is a simple olive oil based vinaigrette
The salad is plant based, a great source of vegetables and fruit, contains whole grains, uses nuts and fresh herbs for flavor and contains heart healthy olive oil rather than heavy sauces or creamy dressings.
Review of the Cookbook
I am such a huge fan of cookbooks and I really am enjoying this one. It’s full of simple, healthy recipes that use flavorful ingredients.
We made the Slow Roasted Salmon from the book for dinner last night and it was delicious.
I’d recommend this cookbook if you are looking for fresh ideas for simple, healthy, everyday dishes.
