During the week I try to get as much work done while the kids are at school as possible. This often means working through my “lunch hour” and relying on quick little bites to tide me over until late afternoon.

Instead of just grabbing whatever I can find in the fridge or pantry, I’ve been trying to pull together and plan a few snacks I can easily put together during the week.
Pastrami Roll Ups
Inspired by a rueben sandwich (one of my all time favorite things to order at the deli), these little Pastrami Roll Ups have become my new snack of choice.
They are simple, flavorful and even a little zesty! Plus they feature sauerkraut, which is a fermented food that may help with gut health and digestion.
They make a great little bite and would make a delicious lunch served alongside a big old salad or some veggies with dip.
Pastrami Roll Ups
Ingredients
- 6 slices thinly sliced pastrami
- 2 tbsp dijon mustard
- 1/4 cup sauerkraut
- 1 dill pickle, sliced
Instructions
- Lay each slice of pastrami flat on a cutting board or clean surface
- brush the inside of each pastrami slice with dijon mustard, then top with a bit of sauerkraut and 2 pickle slices
- Carefull roll each pastrami slice up into a roll up. Secure with a toothpick if needed
