Now that we’ve reached October, I feel like we are in it. The “it” I’m referring to includes work, school, the holiday gear up, weather changes, projects, meetings, sports, etc. In other words “life”.
I find that all this “life” stuff can sometimes take a toll on mealtime. More time spent running around means less time to cook meals.
That’s why I can’t get enough of one pot dishes that come together easily and the whole family loves.
Baked Chicken Florentine
This recipe is one of those types of dishes. Ready in just about 30 minutes and everything cooks in a single dish. Less clean up and less time cooking is always a win at my house.
The flavors remind me of traditional chicken florentine – spinach, cheese and chicken all baked into a delicious casserole style dinner. However, I put a fresh spin on this recipe. I added some fresh tomatoes & basil, left out the cream based sauce and used Extra Sharp Cabot Creamery Cheese to bring it all together.
One of the ways I try and keep my family’s meals easy and healthy is to choose foods that are minimally processed. Cabot’s cheddar cheeses are made simply with milk, salt and cheese making cultures. That’s it. Their simple recipe has won Cabot every major award for taste.
The result is a simple, comforting, cheesy, baked chicken dish that creates the perfect healthy family dinner.

Baked Chicken Florentine
Ingredients
- 1 pound Boneless Skinless Chicken Breasts 3-4 medium sized chicken breasts
- 4 cups Spinach Leaves
- 4 Roma Tomatoes, diced separated into 2 equal groups
- 8 oz
Cabot Vermont Extra Sharp Cheddar Cheese, shredded - 5 tbsp Olive Oil
- 2 tsp Garlic Powder
- 2 tsp Dried Oregano
- 1 tbsp Fresh Basil, chopped
- 1/2 Lemon, juiced
- Salt and Pepper to taste
Instructions
- Preheat Oven to 375 degrees Fahrenheit
- Place chicken breast on a cutting board, cover tightly with plastic wrap and using a rolling pin or mallet, pound chicken breast evenly into thin pieces
- Place spinach in bottom of large baking dish, drizzle with 1 tbsp olive oil
- Place thin chicken breasts on top of spinach. Drizzle chicken with 2 tbsp olive oil, 1 tsp garlic powder, 1 tsp dried oregano and season with salt and pepper
- Cover chicken with 1/2 of the diced tomatoes and all the shredded cheese
- Cover baking dish lightly with foil and bake in oven for 10 minutes8. After 10 minutes, remove foil and place back in oven for additional 10-12 minutes, until cheese is golden brown and chicken is cooked through. **Note – cooking times will vary depending on how thin your chicken breasts are
- While chicken is cooking, combine remaining diced tomatoes, 2 tbsp olive oil, remaining 1 tsp garlic powder, juice of 1/2 lemon and chopped basil in a small bowl and toss to combine. Season as needed with salt and pepper
- Remove cooked chicken from oven, allow to cool slightly before plating. Top with diced tomato mixture and serve.
