Food trends are funny things. Sometimes they are introduced into our lives and then leave just as quickly. While on the contrary, sometimes they stick around and make our lives much, much tastier. Case in point – avocado toast. How much better is breakfast now that avocado toast became a thing?

I usually jump on the food trends waaaaaaay after they are popular. It seems like I’m always trying things months after they’ve become popular.  As I’ve mentioned in previous posts, I like trying new things but I’m also a creature of habit and tend to make similar dishes over and over again. For example, it took me about 3 months to talk myself into trying cauliflower rice. However, it’s finally become a regular dish in our house. Banana Sushi

I saw a picture of Banana Sushi on Instagram recently and was immediately intrigued. A banana with some peanut butter is a regular snack choice of mine but it’s so boring. I decided to jump on the Banana Sushi food trend right away and as a result, I’ve become obsessed.

I’m a believer in “mindful eating”, which includes sitting down and really enjoying your food. I can tell you that it took me about 6 minutes start to finish to create this snack. Once I sat down and ate it, I noticed that I really savored each bite and enjoyed it much slower than I would an ordinary banana. Perhaps it was the fact that I was using chopsticks that slowed me down, but I just felt fully satiated and content after eating this. Consequently, this leads to less risk of grabbing more snacks afterwards out of hunger, boredom or habit.

For this specific “banana sushi roll”, I simply sliced a banana, added drizzled peanut butter on top, unsweetened coconut flakes, chocolate chips and then topped with diced strawberries. Handy tip for you: heat the peanut butter up in the microwave for about 30 seconds and it will drizzle very nicely.

I can’t wait to try out other flavor combinations! Off the top of my head I think it would taste great topped with a sauce made of greek yogurt mixed with mango puree and topped with sliced almonds.

Ingredients

  • 1 Banana sliced
  • 2 Tbsp Peanut Butter
  • 1 Tbsp dark chocolate chips
  • 1 tbsp unsweetened coconut flakes
  • 2 strawberries chopped

Instructions

  • Slice banana and place on plate
  • Heat peanut butter in microwave for about 20 seconds
  • Drizzle warm peanut butter over banana
  • Top with chocolate chips and coconut flakes
  • Top with chopped strawberry
