These Cheesy Chicken Broccoli Rolls are a family favorite, budget friendly dinner that comes together quickly, perfect for weeknight meals.

Cheesy Chicken Broccoli Rolls
This is an easy dinner that the whole family will love and features Cabot Cheese’s Vermont Sharp Cheddar.
The ingredients are simple – a package of refrigerated crescent roll dough, diced chicken, chopped broccoli and cheese.
Simply unroll the cresent roll dough into triangles and top with the chopped chicken and broccoli mixture and then sprinkle with shredded Cabot Cheese.
Cooking tip – be sure to pinch the rolls firmly together at the edges to ensure no mixture leaks out during cooking.
Budget Friendly Tips –
- This recipe is perfect for leftover chicken breast that’s already been cooked or even rotisserie chicken from the store
- If broccoli isn’t in season, you could easily use frozen broccoli, just be sure to fully thaw and drain excess moisture first
- To save time, you can premix the diced chicken, chopped broccoli and shredded Vermont Sharp Cheddar from Cabot Cheese beforehand so at dinner time all you have to is stuff the cresent rolls and bake
Cheesy Chicken Broccoli Rolls
Ingredients
- 1 cup cooked chicken breast, diced/cubed can also use leftover rotisserie chicken
- 1/2 cup broccoli, finely chopped
- 4 oz Cabot Cheese Vermont Sharp Cheddar, shredded
- 1 package cresent rolld dough (8 count)
- salt and pepper to taste
Instructions
- Preheat oven to 375 degrees F
- Spray a baking sheet with non-stick spray and set aside
- In a medium bowl, combine cubed/diced chicken breast and chopped broccoli. Season as needed with salt and pepper (it will depend on how your chicken breast was seasoned before being prepared). Mix to combine
- Unroll the cresent roll dough into 8 triangles on the prepared baking sheet
- Top each triangle with 1-2 spoons of chicken and broccoli mixture, be sure not to over fill and leave enough space to be able to roll them up
- Add 2 oz of the shredded Cabot Cheese to the top of each cresent triangle
- Carefully roll the cresents up and pinch the edges to ensure they are fully closed. This will help prevent any of the filling from leaking out during the cooking process.
- Place in the oven and bake until golden brown, about 10-12 minutes
- Allow to cool slighlty before enjoying!
