I got so excited this week because it was actually cool enough in the morning that I had to wear a light sweater. The slight chill has me looking forward to fall and sweater weather, pumpkin spice lattes and cozy, comforting meals on cooler evenings. I’m already dreaming of hearty, filling meals like rustic soups and savory casseroles.
Inspired by Greece
This Chicken & Apricot Lavash Casserole was based off a dish we had in Greece a few years ago. We had an amazing lamb casserole that was baked into a flaky pastry crust that had me practically ordering a second helping.
In my own version, I wanted to make it simpler and a bit lighter. Using chicken over lamb is an easy way to create a delicious dish that is also more budget friendly.
The Flatbread of your Dreams

Chicken & Apricot Lavash Casserole
This casserole is so simple to make and would be great served with a hearty salad or warm soup.
The casserole filling is a delicious and creamy blend of greek yogurt, juicy chicken, garlic, dried apricots, and herbs. The lavash is used as a bottom and top crust and comes out beautiful when baked in the oven. Brushing the lavash with a little bit of olive oil before cooking gives it a golden brown color and comes out crispy on top and soft inside. Everything you want in a casserole.
I used a seasoning blend called dukkah to add even more flavor to this casserole and I think it really adds a lot to this dish. Dukkah is an amazing egyptian blend of nuts, sesame seeds and spices. I purchased mine at Trader Joe’s but there are countless recipes online if you prefer to make your own.
Chicken Apricot Lavash Casserole
Ingredients
- 2 sheets Whole Grain California Lavash
- 10 oz Greek Yogurt plain
- 3 garlic cloves minced or grated
- 1/2 cup dried apricots diced
- 2 cups chicken breast cooked and cubed
- 1 scallion sliced
- Pinch of Saffron
- Pinch of Paprika
- 1 tbsp Italian Seasoning
- 1 tbsp Olive Oil
- Salt and Pepper to taste
- 1 tsp dukkah nut, sesame seed and spice blend
Instructions
- Preheat oven to 350 degrees
- Cook the chicken until cooked all the way through - either bake in oven, poach or pan fry. Allow to cool and then cube
- In a small bowl, combine greek yogurt, garlic, dried apricots, chicken breast, scallion, saffron, paprika, and Italian seasoning
- Stir until well combined and then taste and season as needed with salt and pepper
- Cut lavash into 1 inch strips
- Cover bottom of roasting/baking dish with 1/2 of lavash strips
- Drizzle with olive oil
- Spread greek yogurt and chicken mixture over bottom layer of lavash
- Tip with remaining lavash strips
- Drizzle with remaining olive oil and sprinkle dukkah over top
- Place in oven and bake for about 15 minutes, until top lavash crust is golden brown
