Mediterranean style dinners don’t have to be complicated or time consuming. This Easy & Quick Dinner Idea features store bought ravioli that’s served with a delicious olive oil and sun dried tomato based sauce that’s ready in minutes.

Criteria for a Quick Dinner

It’s always around this time of year that I find myself needing more quick dinner recipes. With school, homework and extracurricular activites the weeknights can get a bit hectic.

Rather than always relying on microwaveable staples, I’m working on putting together a collection of Quick Dinner Ideas. The criteria in my household for a quick dinner includes –

  • not a huge list of ingredients
  • don’t have a lot of time to chop so minimal food prep is better
  • recipes that rely on pantry staples are great because then it can be made last minute without having to run to the store
  • the family has to like it

Store Bought Ravioli to the Rescue

There is no shame in using store bought ingredients when needed. For this quick dinner idea, we use store bought ravioli for the base of the dish. You could also use tortellini or simply pasta if you prefer.

Since going gluten free a few months ago, it’s been hard to find alternatives for favorites like fresh pasta. I came across this Manini’s Portobello and Cheese Ravioli (gluten free) at Whole Foods a few weeks ago and was surprised at how much I enjoyed it!

I’m looking forward to trying more of their gluten free fresh pasta line.

Simple Sun Dried Tomato Sauce

Rather than adding a heavy cream sauce, I whipped up a quick and delicious olive oil based sauce using sun dried tomatoes, canned artichokes, spinach, capers, garlic, red pepper flakes and parmesan cheese.

Since nothing has to be “cooked” in this sauce, it just takes a few minutes to heat the ingredients up.

The fresh and vibrant sauce pairs so well with the creamy mushroom ravioli. It’s a hearty and filling, quick dinner idea that the whole family will enjoy.

Ravioli with Sun Dried Tomato Sauce

Ingredients

  • 1 package Store Bought Ravioli
  • 2 tbsp olive oil
  • 1 pinch red pepper flakes
  • 1 jar quartered artichoke hearts, drained
  • 2 tbsp sun dried tomatoes, roughly chopped
  • 1 tbsp capers
  • 1 clove garlic, minced
  • 2 cups spinach

Instructions

  • Bring a large pot of water to boil and add ravioli. Cook according to package instructions.
  • When the ravioli is almost finished, heat olive oil in a large pan over medium heat
  • Once warm, add the red pepper flakes and stir to combine. Allow oil and red pepper flakes to heat up for about 45-60 seconds
  • Add artichoke hearts, capers, sun dried tomatoes, and minced garlic to the pan. Stir to combine and cook for about 2 minutes. If you notice the garlic getting brown too quickly, reduce the heat to medium-low
  • Reduce heat to medium-low and add in the spinach and stir to combine. Cook until spinach begins to wild, about 2 minutes
  • When ravioli is finished, use a slotted spoon to add ravioli right to the pan with the sun dried tomato sauce. Stir gently to combine
  • Plate ravioli and sauce, top with grated parmesan before serving
