Juicy and tender Garlic & Basil Roasted Chicken, topped with flavor filled tomatoes, creates a go-to weeknight meal the whole family will love.
Pulling Dinner Out of Thin Air
It is my personal belief that you can never have too many simple weeknight dinner meals up your sleeve.
My typical “need to pull together a quick dinner without any plan” includes the following dishes –
- Spaghetti with frozen meatballs
- Salad (using random veggies in my fridge) with chicken and a can of beans
- Salmon (I always have a filet in my freezer)
A New Recipe for the Repertoire
Well after playing around last week with ingredients I had on hand, I pulled together this Garlic & Basil Roasted Chicken with Tomatoes for a delicious and quick weeknight dinner. Best of all, the whole family liked it, which is always a gold star dinner in my book.
Full disclosure, I had made these Roasted Tomatoes with Garlic & Herbs the night before and used the leftovers for this dish. You could easily just make them at the same time as the roasted chicken, or meal prep them in advance to save yourself a few steps.
Marinade Goes a Long Way
The key to a really good roasted chicken is a good rub or marinade. I used ingredients that I had on hand for this recipe. Since I didn’t have a lot of time for the marinade to flavor the chicken before cooking it, I used a combination of marinade and dry rub to provide a lot of seasoning.
I’ve shared before how much I adore the Ken’s Dressing Simply Vinaigrette and I used the Garlic & Basil flavor again in this recipe. To add a bit extra “in your face” flavor, I also added some fresh garlic and a pinch of greek seasoning blend dried herbs.
The End Result
A little roasting and the end result is a beautiful dish of crispy roasted chicken with garlic and herb flavored tomatoes. Bursting with flavor and fairly easy to put together.
This is definitely a dish I’ll be adding to our weeknight staple dinners.
Garlic & Basil Roasted Chicken with Tomatoes
Ingredients
- For the chicken -
- 6 chicken drumsticks
- 3 garlic cloves smashed
- 1/4 cup Ken's Simply Vinaigrette Garlic & Basil flavor
- 1 pinch greek seasoning blend
- For the tomatoes -
- 1 cups cherry tomatoes halved
- 1.5 tbsp olive oil
- 2 garlic cloves 1 smashed, 1 minced
- Handful fresh oregano
- salt and pepper
Instructions
- Preheat oven to 375 degrees
- For the Tomatoes -
- On a non-stick baking sheet, layer tomatoes in a single layer
- Drizzle with olive oil, minced garlic, salt and pepper
- Mix so tomatoes are coated evenly
- Add smashed garlic to pan with few sprigs of fresh oregano
- Place in middle rack of oven for about 25-30 min, until tomatoes begin to burst open
- Remove from oven and enjoy
- For the Chicken -
- Place chicken in a large dish or sealable plastic bag.
- Add vinaigrette, smashed garlic and greek seasoning
- Allow chicken to marinade in fridge for at least 30 min
- Place marinaded chicken in shallow baking dish and pour any remaining juices from marinade over chicken
- Place in oven and cook for about 40 minutes, until chicken is cooked through
- Serve with roasted tomatoes over the top
- Place the chicken drumsticks in a baking dish
- Add vinaigrette, smashed garlic, and

This looks SO good! I’m a huge fan of simple dinners too-in fact I’m glad you mentioned the meatballs-I think I’ll make spaghetti with Chicken Basil Meatballs (from Costco) on the side (my daughter is a vegetarian) for dinner tonight!
I am loving this garlic-basil roasted chicken!! Sometimes you don’t know what to do with just plain chicken, but this is the perfect solution! Plus these are easy ingredients that you might always have on hand!
