I am so excited to share this recipe for Garlic & Lime Grilled Shrimp on Cucumber Chips with you for multiple reasons! Most importantly, it’s my first monthly post with The Recipe Redux Community.

 

Grilled Shrimp

The Recipe Redux is  an online community of food-loving bloggers putting their healthy spin on favorite recipes. As a part of the community, we are given a topic each month and asked to develop a healthy recipe to share with on our blogs and within the Recipe Redux Community. This month’s theme was “Small Plates for Sunny Days” and I couldn’t have been more excited! On the one hand, I absolutely love summer…warm weather, the smell of suntan lotion, drinking during the daytime, and of course eating al fresco! On the other hand, I absolutely think “small plates” was invented just for me! Have you ever been to a restaurant and couldn’t choose between 2 or 3 things that you wanted to order for dinner? This happens to me all the time! I always wish I could order just a “bite or two” of a couple different entrees and call it a day. Enter small plates….you could order all 3 things you wanted, just in smaller portions. It’s genius! Not to mention it’s perfect for summer because you can just have a few bites without having to feel stuffed or too full.

I developed these Garlic & Lime Grilled Shrimp on Cucumber Chips because they are the perfect small plate to bring to a picnic or group gathering. First of all, the marinade on these grilled shrimp is so flavorful but light at the same time! The lime, garlic and cilantro combine so well and give the shrimp a light, clean, and crisp flavor with just a hint of garlic kick. Served on top of a sliced cucumber chip, it not only offers the perfect crunch but it doesn’t require a fork, my kind of food! It’s the perfect summer picnic food because it can be served at room temperature and it’s so light and refreshing! You can make them ahead of the time, pack them up in your picnic basket and not have to worry about keeping them cold or prepping them last minute.
