Garlic, Basil and Tomatoes lend their summer flavors to this simple and healthy Garlic Shrimp with Lemon Basil Pasta recipe.

We have been living on pasta lately. I’m not sure if it’s because it is such an easy dinner to throw together or because it’s a great way to take advantage of our garden fresh tomatoes.
Whatever the reason is, I’m not complaining. My pants are a tad bit tighter (more pasta, less gym time this summer) but I don’t mind since eating this Garlic Shrimp with Lemon Basil Pasta is worth it.
Save Time in the Kitchen
I received a few samples of Ken’s new line of Simply Vinaigrette and I have been LOVING them! I have used them on salads and as marinades ever since receiving them a few weeks ago and couldn’t be more happy.
Don’t get me wrong, whipping up a simple vinaigrette at home is only a 3 minute process but sometimes you just want to be able to open the fridge, grab a bottle of dressing and skip the rest.
Their Garlic and Basil Vinaigrette was the perfect marinade for the sautéed shrimp in this recipe. The flavors were strong enough to taste after cooking without being too overpowering for the other flavor in this dish.
The Perfect Summer Pasta
While the pasta was cooking, I threw together these Lemony Basil Tomatoes from Half Baked Harvest to add on top of the pasta. These tomatoes are bursting with fresh, summer flavors and serve as the sauce for the this pasta dish.
The pasta, tomatoes, and shrimp get tossed together and topped with a little fresh parmesan – it’s really a delicious and simple summer dish.
Garlic Shrimp with Lemon Basil Pasta
Ingredients
- 20 raw shrimp peeled and deveined
- 1 cup Ken's Garlic & Basil flavor Simply Vinaigrette
- 1 package spaghetti pasta
- 1/2 cup fresh basil chopped
- 1 cup cherry tomatoes halved
- 1/4 cup olive oil
- Zest from 1 lemon
- Pinch of Red Pepper Flakes
- Fresh Grated Parmesan Cheese for garnish
Instructions
- Marinade the shrimp in the Garlic & Basil Simply Vinaigrette dressing for at least 30 minutes
- While shrimp is marinating, prepare pasta according to package instructions
- In a large bowl, combine cherry tomatoes, olive oil, basil, lemon zest and red pepper flakes.
- Once pasta is finished, drain and toss together with cherry tomato and lemon mixture
- Saute shrimp over medium-high heat on stove with 1 tbsp olive oil until cooked through (about 2 min each side)
- Remove shrimp and add to pasta
- Plate pasta and top with a little bit of fresh parmesan cheese
