Greek Chicken Bowls
These Greek Chicken Bowls are an easy, flavor packed recipe that make weekday lunch a breeze.
You could easily make them in about 15 minutes or you could spend a little time meal prepping and have them all ready for lunch on the go.
My tip if you are going to pre-pack them for lunch on the go – don’t add the dressing or nuts/seeds until the last minute. That will help keep everything from getting a little soggy.

Greek Chicken Bowls Recipe

Greek Chicken Bowls
Ingredients
- 1 tbsp olive oil
- 1 pound chicken breast tenders
- 1 tbsp curry powder
- 1 tsp garlic powder
- 1 tsp dried basil
- 4 cups arugula
- 1 cucumber diced
- 1/2 red onion diced
- 2 tbsp kalamata olives sliced
- 1 cup tzatziki sauce
- 1/4 cup sunflower seeds
- 1/4 cup pistachios roughly chopped
- Optional Dressing – olive oil, lemon juice
Instructions
To Prepare the Chicken
- Place chicken tenders in a medium bowl
- Add curry powder, garlic powder, and dried basil. Mix well until all chicken is equally coated
- In a medium saute pan, heat 1 tbsp olive oil over medium-high heat
- Add seasoned chicken and cook about 4-5 minutes each side
- Remove from pan and allow to cool
To Prepare Greek Chicken Bowls
- Place 1 cup of arugula in each of your 4 containers
- Top with chopped cucumber, onion and kalamata olives.
- Chop cooled chicken and divide equally between 4 containers
- If eating right away – top with dollop of tzatziki sauce, sunflower seeds, and pistachio seeds. Drizzle with olive oil and fresh lemon juice if desired
- If prepping bowls for later consumption, add tzatziki, sunflower seeds, and pistachios right before serving to prevent lettuce from getting soggy.
