Using New Ingredients
Every time Dan (my husband) hears me mention “Farro”, he make the same lame joke about Pharrohs (i.e. King Tut)
He’s really becoming a master in the lame dad joke category.
This month’s The Recipe Redux challenge was to use a new ingredient to create a healthy, delicious dish. Last week I shared my love of this fast cooking farro (insert dad joke here), so I know i wanted to use it in this recipe.
Greek Salad + Tabbouleh’s Love Child
Not only did I combine my new favorite farro, but this recipe is the love child of my two favorite salads – Greek Salad and Tabbouleh.
The same fresh flavors of greek salad like cucumbers, tomato and feta cheese. But with all the herby goodness of tabbouleh. Add in the nutty flavor of farro and you have a hearty salad that is chock full of fresh ingredients.
Perfect for Meal Prep
This Greek Salad Farro makes a great meal prep dish for weekday lunches. Simply make a big batch of farro, chop up all the veggies and herbs and you can all the ingredients needed for a quick, go to lunch.
Top with grilled chicken or shrimp and you have a complete, filling, protein packed meal.
I typically leave the olive oil and lemon juice off the salad if I am prepping in advance and just wait to add these right before eating.

Greek Farro Salad with Fresh Herbs
Ingredients
- 2 cups farro
- 4 cups vegetable broth
- 3 english cucumbers small
- 1 cup cherry tomatoes halved
- 4 scallions chopped
- 1/2 cup fresh mint chopped
- 1/2 cup Italian parsley chopped
- 1/4 cup feta cheese crumbled
- 1/3 cup olive oil
- 2 lemons juiced
- salt and pepper to taste
Instructions
- Place farro and vegetable broth into a pot and bring to a boil. Cover and reduce to a simmer for 10 minutes (farro will absorb liquid). Remove from heat and set aside to cool slightly
- In a large bowl, add slightly cooled farro, cucumber, tomato, scallions, mint and parsley, Stir to combine
- Top with feta cheese, olive oil and lemon juice. Season with salt and pepper as needed

Such a gorgeous dish! I love farro grain bowls, and this Greek spin adds a much-needed lightness after all the soups and casseroles this winter.
I have been swimming in soups this winter too so it has been a nice change to switch it up.

I love grain salads like this for lunches! I have not tried the quick cooking farro, but I love the idea. So much faster and easier!
This farro is the best! Using it for fried rice tonight, but this is such a bright dish for it, too.
