The Dessert Dilemma

Imagine yourself in this scenario: You are a restaurant, just finished a delicious dinner and the waiter brings the dessert menu. After the glancing at the menu, do you –

  1. Politely decline dessert and just ask for the check
  2. Order anything with the word “chocolate” in the name
  3. Lean towards the fruit based desserts

If you answered number 1, you can stop reading this post right now because we can’t be friends! Just kidding, you and my husband can become besties because he NEVER wants to order dessert.

I’ll admit that once in awhile I’ll go for the chocolate dessert – unless it’s chocolate ice cream and then no thank you. But my heart is always with the fruit based desserts! Baked apples, grilled pineapple, or anything with blueberry sauce will always be my first choice.

Grilling Peaches

Peaches are typically in season from May through September. They are one of our favorite summer fruits. They also hold up really, really well when grilled. The slightly smoky flavor that grilling gives them is out of this world. Grilling fruit also brings out the natural sweetness.

Trying to incorporate fruit into your dessert is also a great way to incorporate a more Mediterranean Inspired diet into your lifestyle. The natural sweetness satisfies any sweet tooth, especially in summer when fresh fruit is so plentiful. This dessert is so simple but elevated enough to wow your friends at the same time.

Grilled Peaches with Ice Cream, Honey and Thyme

Simply grill peach halves until they are slightly charred (about 5 minutes). Allow to cool slightly and then top with a single scoop of your favorite ice cream. In this recipe we used vanilla because we love the combo of vanilla and peach together. However, you can use whatever flavor you like. Then drizzle with honey and top with a little fresh, chopped thyme.

You might be thinking herbs on top of ice cream is weird but the thyme is so light and lemony that it gives the whole dessert just a little extra boost of flavor.

Ingredients

  • 3 peaches halved and pits removed
  • Cooking Spray or olive oil
  • 6 scoops ice cream
  • 1 tbsp honey
  • 1 tbsp fresh thyme chopped

Instructions

  • After halving the peaches and removing the pits, lightly spray a grill pan (with cooking spray or olive oil) and heat to medium-high heat
  • Add peach halves, cut side down and grill until slightly charred, about 4-5 minutes
  • Remove from heat and allow to cool slightly
  • Place scoop of ice cream in the center of each peach half and then lightly drizzle with honey and top with pinch of fresh thyme
