Grilling and Chilling

[lead]One of the things I like best about warmer weather is firing up the BBQ and grilling for dinner. I don’t actually grill, Dan does (he’s very territorial about his BBQ) but I sit outside for moral support, usually with a cocktail in hand. [/lead]


Yesterday was the perfect night at our house…we had a fun filled day outside and then continued on into the evening grilling and eating outside. The weather was perfect (82 degrees) and the kids love eating outside and then running around the backyard while Dan and I just sit back and enjoy the view.

We typically only grill our proteins: steak, fish, chicken, etc. But I had some artichokes I had purchased earlier in the week so I wanted to try grilling them. I always see pictures and recipes online of grilled vegetables but I haven’t tried many until now.

You guys, grilled artichokes are amazing!!!! They do take some prep work but the char-flavor they get on the grill cannot be beat! I just served ours simple style with olive oil and lemon drizzled on the top but I could see how a flavorful aioli or dipping sauce would be excellent with these.
