I am working on some new Thanksgiving side dish recipes and I just couldn’t wait to share this one!
It’s that good.
Couscous has become one of my favorite lunches lately. It’s so easy to make a large batch in advance to have on hand. The key is to add some protein, veggies and flavors to jazz it up. Some of my recent favorites include chicken, olives, feta, chopped veggies, and a fresh vinaigrette.
While playing around with different flavors and ingredients, I created this Hearty Curry Couscous recipe and it is everything.
Simple and Full of Flavor
The couscous is flavored with a simple curry and olive oil dressing, then combined with crunchy pistachios, chewy raisins, cranberries, and apricots. Topped off with some zesty scallions and you have yourself a flavor packed grain salad that’s perfect for lunch or dinner.
This blend of dried fruit, nuts and scallions is so packed with flavor that you don’t really even need much else in the dish.
Best news is the leftovers are even better than the first day!
Hearty Curry Couscous Recipe
Hearty Curry Couscous
Ingredients
- 2 cups couscous
- 2 tbsp curry powder
- 3 tbsp olive oil
- salt and pepper to taste
- 4 scallions thinly sliced
- 2 tbsp dried cranberries
- 2 tbsp golden raisins
- 1/4 cup pistachios chopped
- 2 tbsp dried apricots chopped
Instructions
- Prepare the couscous according to the package instructions
- Once cooked, set in a large bowl and allow to cool slightly
- In a small bowl or jar, combine curry and olive oil. Mix well, then season with salt and pepper as needed
- Pour curry dressing over couscous
- Add chopped scallions, cranberries, golden raisins, apricots and pistachios
- Mix well and enjoy!
Cous cous is my ALL TIME favorite grain… and I don’t eat it nearly enough!!
