Celebrating Sundays with Family Dinner

One thing that this stay at home pandemic has taught me is how much I love family dinners. Growing up, we had a family dinner every Sunday. It wasn’t always anything big or fancy in the least but I can remember spending over an hour at the table just talking and eating together. This Hearty Mushroom Ragu reminds me of those family dinners.

Schedules get hectic and sometimes there just isn’t enough time in the day to get everything done. However, we always have to eat and I’ve found that it’s a great time to sit around the table and check in with each other.

This season, I’ve been trying out new winter inspired Mediterranean diet recipes and I’m excited to share them in this “Sunday Supper” series.

Hearty Mushroom Ragu

When my husband and I were first dating, I think I was most excited to find out that he loved mushrooms as much as I did. A strange thing to be attracted to I guess, but no one else in my family liked them. Every time we went out to eat and they had stuffed mushrooms on the menu, we knew without even asking that we’d be ordering them.

In fact, my love for stuffed mushrooms inspired these Spinach & Artichoke Stuffed Portobello Mushroom recipe.

I love using mushrooms because it gives dishes such a hearty flavor. One of my favorite tips for creating meatless meals that don’t skimp on flavor or texture is to include mushrooms. This mushroom ragu makes a great Sunday dinner, especially int he winter because it’s pretty budget friendly (hello holiday spending), easy to prepare and smells amazing while cooking!

What Makes this a Mediterranean Diet Recipe?

While we think that almost any dish can become a “Mediterranean diet inspired” recipe, this one checks a lot of the Med Diet Boxes.

  • It’s plant based – no meat/chicken/fish
  • Flavored with lots of fresh herbs
  • Uses olive oil as cooking oil of choice
  • No heavy cream

Mushroom Ragu Serving Ideas

I served this Hearty Mushroom Ragu with this delicious parmesan polenta and it was such a great combination. I don’t think I’ve had polenta many times before but on a whim bought one of those prepared polenta tubes at the grocery store. Once it was jazzed up with some parmesan and pepper, it was really good.

Some other serving suggestions include –

  • On top of pasta
  • Served alongside or on top of chicken or steak
  • As a soup with crusty bread to dip into it
  • On top of mashed potatoes

Hearty Mushroom Ragu

This Hearty Mushroom Ragu is a warm, comforting, hearty, vegetarian meal that is the perfect Mediterranean DIet inspired Sunday Supper.

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 shallot, finely diced
  • 4 cloves garlic, minced
  • 2 pounds Assorted Mushrooms, cleaned and sliced (we used a mix of shitake and white button msuhrooms)
  • 2 tsp dried rosemary
  • 2 tsp dried thyme
  • 2 tbsp flour
  • 1/2 cup dry white wine
  • 2 cups vegetable broth
  • salt and pepper to taste
  • Optional Garnish – chopped Italian Parsley and Freshly Grated Parmesan Cheese

Instructions

  • In a large pot, heat the olive oil over medium heat
  • Once warm, add the diced shallot and saute until soft and translucent, about 5 minutes
  • Add the minced garlic and continuously stir until garlic is fragrant and golden, about 30-45 seconds
  • Add the mushrooms, rosemary and thyme and continue to saute until the mushrooms begin to cookdown and become soft
  • Add the flour and continue to stir until all the flour has been absorbed by the mushrooms
  • Turn the heat up a bit and add the wine, continue to cook until the wine has reduced by about half the amount
  • Add the vegetable broth and season with salt and pepper if needed
  • Continue to let the mushroom mixture simmer, stirring often, until the sauce thickens and the mushrooms continuet soften, about 15-20 minutes
  • Remove from heat and serve wtih optional parsley and parmesan cheese if desired. See serving suggestions below
