Do you remember that Seinfeld episode where Kramer was excited about a certain type of peach being in season for only a small window of time. He couldn’t wait to try them but had some dental surgery or something and couldn’t even taste them. So, he begged George and Jerry to try them and describe them to him?
That’s how I always feel around this time in summer. It’s mid-August and people are starting to talk about fall, stores are bringing out the pumpkin decor and I’m over here like “I have to consume all the peaches, berries and tomatoes as humanely possible can before they are gone”.
A bit dramatic but I always feel like I’m desperately holding on to summer as long as I can because it’s truly my favorite season. Making summer recipes like this Heirloom Tomato and Peach Summer Salad help me find the joy in the end of summer chaos.
Garden Fresh Ingredients
This salad is a celebration of summer in a single bowl. Vine ripened heirloom tomatoes, juicy peaches, and peppery arugula all topped with creamy, fresh mozzarella just can’t be matched as far as flavor. Drizzled with a little honey-lemon vinaigrette and you’ll find me eating this straight out of the serving bowl while standing at the kitchen counter.
Heirloom Tomato and Peach Summer Salad Recipe
This salad is super simple to make. I love making a large batch and serving family style on a long platter. Hold off on dressing the salad until right before serving. The combination of dressing and fresh juices from the tomatoes and peaches can get a little soggy if you dress it too far in advance.
Heirloom Tomato and Peach Summer Salad
Ingredients
- 2 cups arugula
- 2 peaches pitted and sliced into wedges
- 1 cup assorted heirloom tomatoes sliced into wedges
- 1/4 cup red onion thinly sliced
- 1/4 cup toasted pinenuts
- 3 oz fresh mozzarella cheese
- Dressing -
- 1/2 cup olive oil
- 2 tbsp lemon juice
- 1 tbsp honey
- salt and pepper
Instructions
- Combine the dressing ingredients in a small bowl or jar and season with salt and pepper as needed. Set aside until right before serving
- To assemble the salad, layer arugula with sliced peaches, tomatoes, and onions.
- Top with toasted pine nuts and fresh mozzarella cheese
