Flavorful Roasted Vegetables
Growing up, veggies were prepared one of two ways – raw (i.e. salad) or microwaved. To be fair my mom worked nights part time, so she would make dinner in advance and then have us reheat it later to eat.
That probably explains why I love salad so much. But it also explains how I went so long without discovering the beauty of roasted vegetables.

I feel like roasting vegetables just bring out so much more flavor! And so far I haven’t really come across a veggie that doesn’t taste good roasted. Tomatoes, onions, squash, green beans, asparagus, mushrooms, heck even kale is good roasted.

Mediterranean Inspired Side Dish
This herb roasted zucchini came about because we purchased this beautiful assortment of zucchini and yellow/green squashes at a road side stand on our way home from camping.
They sat on my counter for about a week before I decided I should probably do sometime with them before they go bad.
I decided to roast them with some olive oil, garlic, fresh thyme from the garden and then one of my favorite additions – Dukkah. It’s an Egyptian spice blend made of toasted nuts and spices that is so so so good! I find mine at Trader Joe’s but I know many other stores sell it or you could make it yourself at home.
Herb Roasted Zucchini Recipe
This recipe is so simple but the flavors are amazing! I would serve this dish alongside a simple chicken, lamb or fish for a winning meal.
Herb Roasted Zucchini
Ingredients
- 1 pound zucchini and/or assorted squash
- 2 tbsp olive oil
- 1 clove garlic minced
- 2 tbsp dukkah
- 3 sprigs fresh thyme plus more for garnish if desired
- 1 oz parmesan freshly grated
Instructions
- Preheat oen vto 450 degrees F
- Slice the zuchicni and/or squash into 1/2 inch cirlces
- Place in a large bowl with olive oil, minced garlic, fresh thyme, and dukkah
- Mix until well combined and transfer content to a large baking dish
- Place baking dish in oven and cook for 10 minutes
- Careful remove baking dish and top zucchini mixture with grated parmesan cheese
- Return back to hte oven and cook for additional 5-8 minutes, until top of zucchini is golden brown
- Remove from oven and allow to cool slightly before serving. Garnish with additional fresh thyme if desired
