Lately I feel like it’s become my goal in life to stockpile a collection of dinners that I know my entire family will love.
The kind of dinners that no one automatically makes a gross face about when you tell them what you are having. The kind of meal that the kids actually say “yay, I love when we have that”. No one pouts and just pushes the food around their plates thinking you don’t know that they aren’t actually eating it.
Perhaps that’s like saying I want a pet unicorn, but a girl can dream right?
In all actuality, I have found that “build your own” style dinners always get the best reaction from my family. Some of our favorites include –
Build Your Own Pizza Night
A couple weeks ago, the kids wanted to make their own pizzas. I went to the store to get ingredients and the store was out of any kind of pizza dough.
Rather than scratch the pizza idea, I decided to make the pizza dough at home. I had previously made pizza dough when I made this Mediterranean Diet Inspired Pizza, so I used the same recipe.
I used this 30 Minute Homemade Pizza Crust recipe for our pizzas and they came out amazing! And quick. Win-win.
Setting up the rest of the meal was easy. I grabbed a bunch of toppings, two types of sauces (traditional red sauce and pesto), and cheese. I put them into little bowls and let the kids go to town on choosing their own toppings.
The topping ideas are endless when it comes to make your own pizza night. Some ideas include –
- bell peppers
- artichoke hearts
- chopped tomatoes
- olives
- caramelized onions
- pepperoni
- sun dried tomatoes
- mushrooms
- chicken
Arugula and Prosciutto Pesto Pizza
I made this recipe during our family pizza night and it was so good! Dan (the hubby) was reluctant at first but he said it was fantastic and ended up eating multiple slices.
One tip for this Arugula & Prosciutto Pesto Pizza – a little pesto goes a long way. If you add too much, it can cause the dough to get a little soggy. The arugula and prosciutto get added AFTER the pizza is cooked. Repeat – the arugula and prosciutto do not get put in the oven.

Arugula and Prosciutto Pesto Pizza
Ingredients
- 1 pizza dough
- 1 cup pesto
- 1-2 cups mozarella cheese, shredded
- 1 cup arugula
- 3 slices prosciutto
- 1 tbsp balsamic vinegar glaze if you can't find the glaze, regular balsamic vinegar works as well
Instructions
- Make or prepare your pizza dough as instructed by the package. If you are looking for a great homemade pizza dough recipe, see link in the notes section
- Preheat oven to 425 degrees F
- Place your rolled out pizza dough on a large baking sheet sprayed with non-stick cooking spray
- Spread the pesto thinly over the dough
- Add the shredded mozzarella cheese on top
- Bake on the center rack in oven for 10-12 minutes, until crust is golden brown and cheese is melted
- Allow to cool slightly and then top with arugula and torn pieces of prosciutto. Drizzle with balsamic glaze and enjoy.
