Mediterranean Diet Sweet Potatoes
Back in 2016, I was just starting out with this website. I posted this Baked Sweet Potatoes recipe, which had been a favorite of mine for a long time.
Since switching to a more Mediterranean diet, not only in my own home, but on The Domestic Dietitian as well, I made a few modifications over the years to make the recipe fit better into this lifestyle.
I also updated the photos because…hello blurry potatoes.
How Did it Become a Mediterranean Diet Recipe?
As with most of the meals on this website, just a few small tweaks and changes can make a recipe more “Mediterranean diet” friendly.
This recipe hits the following Mediterranean Diet recommendations –
- Plant based recipe
- Olive oil in place of butter
- Dried / fresh herbs for flavor
- Baked instead of fried
Are Sweet Potatoes Healthy?
It is my belief that all foods fit into a healthy diet & lifestyle…it’s all about balance. But yes, sweet potatoes are definitely healthy.

Oven Baked Sweet Potatoes Cooking Tips
The key to baking sweet potatoes is to keep the slices as even and uniform as possible. Since my slicing skills tend to be all over the place, I highly recommend a Mandoline.
This is the Mandoline I personally have and I like it. It’s from Target and under $50.
Oven Baked Sweet Potatoes with Garlic Oil
Ingredients
- 2 medium sweet potatoes
- 4 tbsp extra virgin olive oil
- 2 cloves garlic, minced
- 1 shallot, diced
- 1 tbsp chives, chopped
Instructions
- Preheat oven to 375 degrees F
- After rinsing your sweet potatoes, slice evenly into about 1/4" thick rounds
- Place in a large mixing bowl
- Add olive oil, minced garlic and diced shallot to the bowl with the potatoes and mix until all potatoes are evenly coated
- Layer sweet potatoes slices into an oven proof baking dish. Pour any remaining olive oil mixture over the potatoes
- Bake in the oven for about 45-60 minutes, until fork tender and golden brown on the surface
- Sprinkle with fresh chives before serving
