I’m sharing this recipe to prove that I truly live by the motto “Everything in Moderation”. I post and write about a lot of healthy recipes and meal ideas yet I feel like it’s important to balance that out with delicious treats. It’s all about balance. In my opinion, indulging once in awhile in something you truly want is all part of creating a healthy and balanced life.
I actually have quite a sweet tooth and have learned over the years to choose sweets that I really love. I don’t waste time (or calories) on foods that I don’t enjoy or really like all that much. These Peanut Butter Chocolate Chip Cookies fall into the category of sweets I really really enjoy! The perfect combination of chewy and gooey. They almost melt in your mouth if you eat them right out of the oven. Which I highly recommend.
Here is a fun secret that I actually learned from reading the fantastic book “#GirlBoss” by Sophia Amoruso. She used to work at Subway (the sandwich shop) and shared that their secret to the perfect cookie is to drop the sheet pan down on the counter immediately after taking the cookies out of the oven. I tried it while making these cookies and it works! The cookies immediately flatten a little bit, making them so soft and chewy inside. It’s fantastic.
