I absolutely love sandwiches. There is just something so satisfying about the perfect combo of tangy mayo, crisp lettuce, sharp cheese and sliced meat, all sandwiched between a crunchy roll. If I was on my death bed, I probably would request a sandwich as my last meal.
Since sandwiches typically aren’t the most figure-flattering food (so much bread!), I don’t have them too often. However, I really do live by my own motto – everything in moderation, so when I do have a sandwich, I have a sandwich. I’m not talking about some puny little sliced white bread sandwich with nothing but some mustard and a couple pieces of lunch meat. I mean a sandwich on some great crunchy, fresh-baked roll or bread, piled high with toppings. Remember that if you are going to indulge in something you don’t have very often, try to make it count and make it something you really love and look forward to eating. For me, that means taking a little extra time and constructing a sandwich that even Mr. Pickles himself would be proud of.
I saw this Grilled Pork and Fontina Sandwich on a re-run of Giada At Home on Food Network (one of my faves) the other day and knew I needed to make it (had to wait until my 21 day sugar detox was completed).
You guys….it is truly amazing! The grilled pork is so juicy and goes great with the fontina cheese. The extra 30 seconds it took to jazz up the mayo with some fresh lemon juice, lemon zest and basil….game changing!
