Why Roast Vegetables?
Roasting veggies is an amazing way to bring out their delicious flavor. It’s a great way to prepare vegetables for people that claim to “not like them”.
We also love roasted vegetables because you can prepare them ahead of time. They reheat easily and can be used in a variety of dishes.
Roasted Peppers with Garlic and Herbs
I especially love roasting bell peppers because –
- they are pretty easy to find year round at the store
- bell peppers are pretty budget friendly
- a great way to increase veggies in your diet and meals
- you can use them in a variety of ways for meals and snacks
These Garlic and Herb Roasted Peppers are fantastic. A drizzle of olive oil, minced garlic and fresh herbs is all it takes. We used a combination of fresh and dried herbs but either work fine on their own.
How to Enjoy Roasted Peppers

- Stuffed with rice, quinoa or couscous
- Chopped and served as a side dish

Roasted Peppers Recipe
These Roasted Bell Peppers with Garlic and Fresh Herbs is a Mediterranean diet inspired recipe that makes a great addition to many meals.
Roasted Peppers with Garlic and Herbs
Ingredients
- 3 bell peppers
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 3-4 sprigs fresh thyme
- 1 tsp dried oregano
Instructions
- Preheat the oven to 400 degrees F
- Cut each bell pepper in half lengthwise, remove any seeds and/or membrane
- Place each halved bell pepper in a rimmed baking dish
- Drizzle bell peppers with olive oil and then top with minced garlic, dried oregano and fresh thyme
- Roast in the oven for 20-25 minutes
