I mean, what’s not to love about an entire dinner that you make on a single sheet pan? Plus the clean up often times just means removing foil from a pan.
Chicken Za’atar
I became obsessed with this aromatic middle eastern spice blend when I stumbled upon this Za’atar from Z&Z. It is so flavorful and I have used it in so many different recipes.

One of my favorite recipes using this flavorful spice is Chicken Za’atar. A simple recipe for deliciously roasted chicken seasoned to perfection.
Sheet Pan Chicken Za’atar
The beauty of this mediterranean diet inspired recipe is that it takes simple ingredients and creates a flavor packed dish.
I used chicken drumsticks because my kids love them. Any kind of chicken would work just as well in this recipe.
The chicken is seasoned with za’atar and then placed on a sheet pan with sliced fingerling potatoes, baby kale leaves, and lemons.

Sheet Pan Chicken Za’atar
Ingredients
- 1 lb fingerling potatoes cut in half
- 2-3 tbsp olive oil
- 2 lb chicken drumsticks or chicken of your choice
- 4 tbsp za’atar spice blend
- 2 tsp smoked paprika
- 2 lemons halved
- 2 cups baby kale leaves
- salt and pepper to taste
Instructions
- Preheat oven to 400 degree F
- On a large foil covered sheet pan, lay halved potatoes in a single layer and drizzle with 1 tbsp olive oil, salt and pepper
- Roast in oven for 20 minutes
- While potatoes are cooking, mix 2 tbsp olive oil with za’atar and smoked paprika in a small bowl
- Rub za’atar and oil mixture over chicken, coating it well
- Remove potatoes from oven and add chicken and lemon halves
- Return to oven for additional 25 minutes (until chicken is fully cooked)
- Remove pan from oven and add baby kale leaves and last tbsp of olive oil. Return to oven and cook for additional 5 minutes
- Remove and let cool slightly before serving
Really like this one. That spice is good, and anytime we have chicken its an excuse to get the cajun sauce out. Not that it needs it. But i’d put it on cereal if i ate cereal.

Thanks Tara, I recently discovered one by a family run company called Z&Z DC and I love it! In the past month I’ve used it more than my Everything But the Bagel Seasoning Blend, which is saying a lot!
I am loving za’atar lately! Just started eating it in the past year or so!
It’s relatively new to me but now I’m obsessed and put it on so many things.
