It’s officially the first day of Fall and we are kicking the season off with this fantastic slow cooker recipe – Chicken Tortilla Soup.
Very easy and simple to make, the slow cooker does all the heavy lifting. Flavored with robust spices and topped with all the goodies, this is a fall, family favorite.
Family Friendly Dinners
There is just something about fall that makes me want to stockpile a bunch of dinner recipes to make over and over again. Maybe it’s the time change or the cooler weather but I just want to be cozy around the dinner table during the week.
This Chicken Tortilla Soup recipe is a family favorite. Everyone can add their own toppings, so the kids feel like they have a say in what they are eating. It’s hearty enough to be enjoyed on it’s own as a full meal, but we sometimes add a big green salad.

What Makes this Chicken Tortilla Soup a Mediterranean Diet Recipe?
While not a traditional Mediterranean recipe by any means, this soup is Mediterranean diet inspired. It fits into the following Mediterranean Diet Guidelines –
- includes beans for added fiber and protein
- lean protein (chicken) as main source
- flavored with herbs and spices rather than salt or heavy cream
- topped with greek yogurt and avocado
- just a small sprinkling of cheese used for flavor
- simple ingredients that can be found at any store

Slow Cooker Chicken Tortilla Soup Recipe
Slow Cooker Chicken Tortilla Soup
Ingredients
- 3-4 chicken breasts
- 1 tbsp chili powder
- 1 tbsp cumin
- 1 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 bell pepper, seeded and chopped
- 1 onion, diced
- 28 oz diced tomatoes (with juice)
- 1 can black beans, drained and rinsed
- 4 cups chicken broth
- 4 oz tomato paste
- 1 each chipotle pepper in adobo sauce
- Optional Fixings: greek yogurt/sour cream, shredded cheese, cilantro, avocado, tortilla chips, lime wedge
Instructions
- Place the chicken breast in the slow cooker and sprinkle with chili powder, cumin, garlic powder, salt and pepper
- Add bell pepper, onion, diced tomatoes (with the juice), tomato paste, chipotle pepper, black beans and chicken broth
- Stir to combine and cook on high for 5 hours or 8 hours on low
- Once done, remove chicken and place in large bowl. Use two forks to shred chicken and then add back into crock pot.
- Top with desired fixings
