In the summer we love grilling, especially when it’s warm out. Some of our favorite grilling recipes include –

Up until we began recipe testing for this post, we had never really even thought about putting a pizza on the grill. During a recent trip to Whole Foods (a store we don’t get to frequent too often), we saw this Cappello’s Naked Pizza Crust (made with almond flour so it’s gluten free) and added it to our purchases. When we got home and were reading the back, it suggested grilling the crust and we were intrigued.

So we lit up the grill, drizzled the crust with a little olive oil and tossed in the bbq for a few minutes on each side. The end result was a lightly charred, deliciously crispy crust. Needless to say, we are fans of the grilled pizza now.

Using Ricotta on Pizza

Ricotta is having a moment on social media lately. Some say it’s even trying to surpass avocado as the king of toast toppings. Shocking right?

We love ricotta over here, so much so that we actually have an older blog post on this site showing how easy it is to make Homemade Ricotta Cheese. It’s only three ingredients – milk, vinegar and salt. Plus you won’t believe how much better homemade ricotta cheese tastes when compared to store bought brands. However, we still love some store bought versions and when we are crunched for time it works just great.

We used ricotta in place of sauce or cheese in this grilled pizza recipe. It’s creamy, a bit salty and just pairs so well with the fresh fruit and basil.

Summer Ripe Peaches

Stone fruit is in season and peaches are top of our must have list. We are no stranger to combining the amazing flavor of fruit and ricotta. Check out this Grilled Stone Fruit with Ricotta recipe for another great summer idea!

What we love about this recipe is that the toppings are really easy but pair together so nicely. Juicy, ripe summer peaches and garden fresh basil, all topped with honey. To jazz it up a bit we used this Mike’s Hot Honey, which has a bit of a kick but regular honey would be just as great.

Summer Peach and Ricotta Grilled Pizza (gluten free)

This grilled pizza features creamy ricotta cheese, ripe peaches, crunchy pistachios, garden fresh basil and a drizzle of hot honey for a delicious summer meal.

Ingredients

  • 1 Ready Made Pizza Crust (we used Cappello's Naked PIzza Crust, gluten free)
  • 1 tsp Olive Oil
  • 1 cup Ricotta Cheese
  • 1 Peach, pitted and thinly sliced (we lef the skin on but you can peel if you prefer)
  • 2 tbsp Pistachios, chopped
  • 1 tbsp Fresh Basil, chopped
  • 1 tbsp Mike's Hot Honey (or honey of your choice)

Instructions

  • Start by preheating your grill
  • Drizzle the pizza crust with olive oil, once the grill is warm, add the pizza crust and grill until lightly charred and golden brown (about 2-3 minutes on each side)
  • Remove from grill and allow to cool slightly
  • Spred the ricotta cheese on top of the pizza crust with a spoon. Add the thinly sliced peaches, chopped pistachios and chopped basil
  • Drizzle with honey, cut into slices and enjoy.

Notes

Please note – the crust that we used (this Cappellos Naked Pizza crust) is Gluten free, if you choose another crust the recipe may or may not be gluten free (depending on the crust you select).
