I get a bit blue when the summer starts winding down. It’s always my favorite time of year but as soon as August hits, I can’t help but start feeling overwhelmed with back to school prep.

Peaches are hitting their peak season now and will be around until the start of fall (just in time for cobbler!). I absolutely love the flavor and texture of ripe peaches.
Perfect for iced tea, salads, baked goods and just good old fashioned snacking.
Mediterranean Inspired Salads
When we were visiting Italy, there were so many salads that had fresh, ripe fruit added in. Everything from cantaloupe, melon, berries and peaches.
Many of the health benefits associated the Mediterranean Diet come from the increase of fresh fruit and vegetables in the diet.
Health Benefits of Peaches
Peaches are packed with numerous vitamins, minerals and compounds that add to a healthy diet.
Vitamin A – a medium peach provides about 6% of your daily recommended intake. This vitamin is essential for maintaining good eye health, night vision, healthy skin and protection against certain cancers.
Vitamin C – a serving of fresh peach provides us with 15% of our daily Vitamin C, which is needed to form connective tissue in the body and a good source of antioxidants.
A medium size peach also provides about 2% of our daily value of Vitamin E, K, Folate, Iron, Choline, Potassium, Magnesium, Phosphorus, Zinc and Copper.
Fresh fruit also provides some fiber to our bodies, which can contribute to lower levels of cholesterol and protection against heart disease.
Summer Peach Salad with Couscous and Pistachios
This summer peach salad is seriously so easy and packed with fresh flavors. It follows the Mediterranean Diet Principles by –
- Incorporating fresh fruits and veggies into meals with 2 cups of leafy greens, red onion, and 1 cup of peaches
- Healthy fats from the olive oil and pistachios
- Whole grains and fiber from the Whole Wheat Couscous
- Fresh herbs and lemon in the dressing provide flavor and freshness
It comes together in minutes and is filling, flavorful and fresh.
Summer Peach Salad with Couscous & Pistachios
Ingredients
- 2 cups mixed greens
- 1 cup couscous already cooked
- 1 cup peaches pit removed, diced
- 1/4 cup red onion diced
- 2 tbsp goat cheese crumbled
- 1/4 cup pistachios shells removed, rough chop
- 2 tbsp extra virgin olive oil
- 1/2 lemon juiced
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tbsp fresh basil chopped
Instructions
- Place the mxied greens in a large bowl
- Add couscous, peaches, red onion, pistachios and goat cheese
- Drizzle with olive oil, lemon juice, salt and pepper
- Mix well to combine
- Garnish with fresh basil

What a great suggestions, canned peaches (or even thawed frozen ones) would work just as well.
