We are huge fans of Taco Tuesday at our house. The kids love it and I love that they are simple, quick and everyone enjoys them. However, the same old tacos week after week can get a bit routine.
Thankfully, Kevin’s Natural Foods is there to shake up your routine with their delicious 5 minute entrees. Yes, you read that correctly…5 minute entrees!
Usually with packaged convenience items you get a bunch of preservatives and questionable ingredients. Kevin’s Natural Foods is different. They are on a mission to make clean eating taste delicious. They have a wide array of entrees that gluten free, soy free, refined sugar free and use meat/poultry that are free of antibiotics.
Thai Style Coconut Chicken Tacos
These tacos are so delicious that we were fighting over who got the last serving. Plus they honestly take less than 10 minutes to make.
The base of the taco is this Thai-Style Coconut Chicken from Kevin’s Natural Foods. In this one package you get tender chicken breast strips that get combined with a mild but flavorful curry that’s made with a blend of coconut milk, basil and Thai spices. This sauce is easily one of my personal favorites! It’s so rich and creamy without being too spicy or overpowering.
To make the Thai-Style Coconut Chicken, you simply heat a bit of olive oil in a sauté pan, add the chicken and cook for about 1-2 minutes on each side, add the sauce package included with the chicken and that’s it! It’s so easy and quick. Perfect for family friendly weeknight dinners.
To assemble our chicken tacos, we simply –
- lightly charred corn tortillas over the stove
- added the creamy Thai-Style Coconut Chicken
- topped with shredded carrots, diced bell pepper, a little cilantro and some chopped peanuts
This is a family dinner that will definitely be on repeat in our house.

Thai Style Coconut Chicken Tacos
Ingredients
- 1 package Kevin's Natural Foods Thai-Style Coconut Chicken
- 6 small corn tortillas (street taco size)
- 1/2 cup shredded carrots
- 1 bell pepper, diced
- 2 tbsp cilantro, chopped
- 2 tbsp chopped peanuts
- 1/2 lime
Instructions
- To cook the Thai-Style Coconut Chicken, simply follow the directions on the back of the package. You just heat 1 tbsp olive oil in a skillet over medium high heat, add the chicken and brown on each side for 1-2 minutes. Then add the sauce and let simmer for about 30 seconds.
- While the chicken is cooking, lightly char the corn tortillas over the stove's burner or by lightly searing in a large pan over medium-high heat
- To assemble the tacos, simply add the prepared Thai-Style Coconut Chicken to each tortilla and top with carrots, bell pepper, cilantro and chopped peanuts. Add any remaining sauce from the pan over tacos and squeeze with fresh lime.
