Italy Inspired Dish

A few years ago, Dan and I were lucky enough to visit Tuscany while the kids stayed at home with grandma. It was a wonderful trip with lots of relaxation, wine, and delicious food.

Since returning, I have enjoyed recreating some of our favorite dishes from the regions we visited.

This Tuscan Arugula Salad has easily become one of my go-to, favorite dishes. Especially in the summer, when it’s too hot to cook and we enjoy our meals outside.

Simple Mediterranean Diet Recipes

This salad definitely fits into the principles of the Mediterranean Diet.

It’s so simple to make. It only requires four ingredients but the flavors are amazing together. It’s light and refreshing but hearty enough to accompany dinner or stand alone as a light lunch.

I loved that the lemon slices are part of the salad. The secret is to cut the lemon slices as thinly as you can. Don’t forget to wash the outside of the lemon before cutting since you eat the rind.

Simply dressed with a drizzle of olive oil, fresh lemon juice and a little salt & pepper – you can throw it together within minutes.

The Perfect Italian Meal –

We served this one night with this Wild Mushroom Tuscan Risotto from Wanderspice and it was the perfect meal!

Ingredients

  • 4 cups arugula
  • 3-4 slices proscuitto torn into pieces
  • 1/4 cup freshly shaved/grated parmesan cheese
  • 1/2 lemon thinly sliced and cut into small triangles
  • Olive Oil
  • Salt & Pepper

Instructions

  • Place the arugula in a large bowl or serving platter
  • Top with proscuitto, parmesan cheese and lemon slices
  • Drizzle with olive oil and sprinkle lightly with salt and freshly ground pepper
  • Enjoy!
