Our Weekly Meal Plan

It’s been a few weeks since I shared our weekly meal plan and I’ll admit, it’s mostly due to the fact that I just haven’t been home that much and I just haven’t been into planning meals lately.


We’ve been camping a few times (a camping menu plan coming soon!) in the past few weeks or at the lake for 4th of July, therefore I’ve slacked off on really meal planning for an entire “week”. Full disclosure, we had McDonalds for dinner last night (and it was delicious!). Sometimes you just hit a slump.

However, we are back home now and I did a quick meal plan yesterday, along with a grocery store run.

Here’s what my family is scheduled to have this week:

Monday

  • Breakfast: scrambled eggs, fresh fruit
  • Lunch: Tuna Fish Sandwiches (grilled cheese for kids)
  • Dinner: Panko Herb Salmon, Artichokes, Salad (gnocchi with peas for kids)

Tuesday

  • Breakfast: scrambled eggs, fresh fruit
  • Lunch: Spinach Salad with Grilled Chicken, Mandarin Oranges, Hard Boiled Egg and Shredded Carrots
  • Dinner: Grilled Steak, Caramelized Onion Lentils, Green Salad (same for kids, carrots in place of salad)

Wednesday

  • Breakfast: blueberry protein smoothie
  • Lunch: leftover spinach salad
  • Dinner: Spatchcocked Lemon Chicken (from TJ’s), Bean Salad, Chipotle Lime Butternut Squash

Thursday

  • Breakfast: Overnight Oats
  • Lunch: Leftovers
  • Dinner: Zoodle-Spaghetti with Turkey Meatballs, Salad (spaghetti in place of zoodles for kids)

Friday

  • Breakfast: Eggs in Hole with Pesto
  • Lunch: Tuna Salad Lettuce Wraps (tuna salad on crackers for kids with yogurt and fruit)
  • Dinner: Going Out

 

 

**Our weekly grocery budget restarts on Friday, so I only planned our meals thru Friday this week. We budget $200 a week for groceries for our family of four. This includes breakfast, lunch, dinner, snacks and alcohol.
