A weekly series where we share our weekly Mediterranean diet Meal Plan and recipes we loved to anyone looking for meal and recipe ideas.

Sometimes one of the hardest parts of planning meals is thinking of new things to make. Our Mediterranean Diet Meal Plan weekly series is designed to show examples of meals our family is making, along with a few things we’ve been loving lately.

Our Weekly Mediterranean Diet Meal Plan

We took the holiday off from sharing our weekly menus because our meals were just all over the place! Now that the New Year is here and our schedules are somewhat back to normal, we are back to sharing!

If you are new here (welcome!), this series is purely designed to share some Mediterranean diet inspired meal ideas. Our menu planning style is what we describe as “loose planning’ because honestly stuff happens all the time and our meals get moved around, changed, etc.

A quick note before we share this week’s meal plan – breakfast is pretty standard at our house, so I don’t include it on the weekly plan. Lunch for the kids also revolves around their favorites or if they are buying school lunch that day, so I only meal plan for my lunch at home. Saturdays we typically eat out for lunch or dinner so I keep that day open on the meal plan.

What We Ate this Week

Sunday

  • Lunch – Curried Dal (from this Spilling the Beans Cookbook) with Hardboiled Eggs (I make mine in the Instant Pot) . The kids had sandwiches
  • Dinner – Lasagna (I just used the recipe on the side of the Barilla Lasagna pasta box), Caesar Salad

Monday

Tuesday

  • Lunch – Leftover Nicoise Salad
  • Dinner – Pulled Pork Tacos with Black Beans and Rice

Wednesday

Black Bean Stuffed Sweet Potato

**On Wednesday my kids have gymnastics right before dinner so it’s always an easy dinner that night because we are on a time crunch.

Thursday

  • Lunch – Chopped Salad (finely chopped arugula, red onion, dried apricots, almonds with olive oil vinaigrette)
  • Dinner – Banza Pasta with Steamed Mussels (from Trader Joe’s), Parmesan Cheese, Kalamata olives, garlic and red pepper flakes), served with a bagged salad on the side. The kids had plain pasta and salad

Friday

Saturday

We went out for dinner and just pulled together lunch made from whatever was on hand.

What We Loved this Week

Just a collection of random things we loved this week. Ranging from recipes to new products at the store.

  1. Green Goddess Seasoning Blend

This seasoning blend from Trader Joe’s was high on our list of loves this week. It’s a blend of onion, salt, pepper, garlic, chives, green onions, spinach, lemon and parsley.

How we use it – I love it combined with olive oil to make a quick vinaigrette or even mixed into greek yogurt to create a dip for veggies.

2. POM Wonderful 100% Pomegranate Juice

We love this pomegranate juice. It’s the perfect blend of tart and sweet. Dan and I like adding it to sparkling water for a festive way to get in our water intake. My son loves it just on ice with a little bit of regular water on top to dilute it down. It’s great in smoothies too. Perfect for this time of year because it’s high in antioxidants and can help keep inflammation down.

3. Levoit Humidifier

We’ve been using humidifiers in the our house ever since my son was little and suffered from really bad seasonal allergies. After trying many different types and models, we recently purchased this Levoit Humidifier and we love it! You can adjust not only the steam temperature but the humidity level, put on it on a timer, use the remote, etc.

We bought one for each of the kid’s rooms and our room as well. A must have for the dry winter air!
