We share our family’s weekly meal plan simply for meal ideas and recipe inspiration for anyone else looking for suggestions. Please keep in mind that every family and person is different and this is just what works for us.

How We Meal Plan
We go more in depth on how we go about planning meals in this post – Meal Planning Guide but just to quickly summarize –
- Breakfast is usually pretty standard in our house so I don’t include it on our meal plan list
- My kids either bring a bagged lunch or buy hot lunch at school so I only meal plan for my lunch (and my husband if he is working from home that day)
- I include notes on some days to indicate if the meal is something we have to make quickly, on the go, etc. This really helps when it comes to planning meals and buying food to know our schedule in advance.
- On Saturdays we typically eat leftovers and eat out for lunch or dinner. I indicate that on the meal plan each week but just in case you were wondering
What We Ate This Week
This weekly meal plan includes Easter Sunday. We hosted an easy lunch at my house this year with family. We had a make your own sandwiches platter, a delicious spinach salad with homemade poppy seed dressing and plenty of fresh fruit.
You’ll also notice we had quite a bit of hardboiled eggs for lunch…it was a great way to use up those leftover Easter eggs.

I made this Strawberry Salad with Poppy Seed Dressing from Taste of Home for Easter lunch. It was delicious! I made three small changes – I used plain pecans instead of candied nuts, spring mix in place of romaine and used greek yogurt in place of mayo for the dressing. Highly recommend for a great salad recipe.
What We Loved this Week
I saw these BeanVIVO Refried Pinto Beans at Grocery Outlet last week and instantly fell in love.
The ingredients are simple – water, pinto beans, onions, avocado oil and sea salt. They are convenient, a great source of fiber, a bit of protein and they make a great addition to quick meals.
We heated them up, spread them on a tortilla, topped them with salsa, avocado, and shredded cheese and called it a refried bean burrito.
Highly recommend for a convenient, plant based food.
