Every week we share our family’s Mediterranean diet meal plans with the goal in mind to simply provide meal ideas, recipes, and inspiration. We also love sharing a few things we’ve been loving lately.
Mediterranean Diet Inspired Menus
We are back in the swing of things at our house and January is in full effect. I feel like this is one of our last weeks of freedom before we get into Little League and Softball! It’s our first year signing the kids of for baseball/softball, so if you have any tips on how to manage the hectic schedules…send them my way!
As always, these meal plans are simply to provide meal ideas and inspiration. Everyone’s needs, budgets, cooking styles, etc are different. So what works for my family might not work for you or yours.

How We Meal Plan
We go more in depth on how we go about planning meals in this post – Meal Planning Guide but just to quickly summarize –
- Breakfast is usually pretty standard in our house so I don’t include it on our meal plan list
- My kids either bring a bagged lunch or buy hot lunch at school so I only meal plan for my lunch (and my husband if he is working from home that day)
- I include notes on some days to indicate if the meal is something we have to make quickly, on the go, etc. This really helps when it comes to planning meals and buying food to know our schedule in advance.
- On Saturdays we typically eat leftovers and eat out for lunch or dinner. I indicate that on the meal plan each week but just in case you were wondering
What We Ate This Week
Sunday
Lunch – we were skiing this day, so we ate lunch at the cafe at the ski park
Dinner – we were driving home from said ski trip so we stopped for dinner at a restaurant. Since our lunch was pretty big, I simply ordered a bowl of soup and a big old salad.
Monday
Lunch – Black Bean Stuffed Sweet Potato (just shared this recipe on the Website but it’s from our Mediterranean Diet Made Easy cookbook)
Dinner – Pasta with Lightly Steamed Mussels, Capers, Olives, Garlic, and Za’atar Tango Salad (kit from Trader Joes). Both items are listed in our 18 Mediterranean Diet Finds at Trader Joe’s. The kids had plain pasta with frozen meatballs.
Tuesday
Lunch – Cottage Cheese with Blueberries and Walnuts, Smoked Salmon on a piece of toast with avocado, tomato and everything but the bagel seasoning blend
Dinner – Carne Asada Tacos with black beans, cheese, guacamole, cilantro, and salsa
Wednesday
(the kids have gymnastics so dinner is always a mad rush to make something quick when they get home in between showers, homework and bedtime)
Lunch – Leftover carne asada on top of mixed greens with tomato, olives, avocado and cheese, drizzled with Primal Kitchen Ranch Dressing
Dinner – Scrambled Eggs, Chicken Apple Sausage, Grapefruit, Yogurt, and Hashbrowns
Thursday
Lunch – Nicoise Salad with Canned Tuna (from The Mediterranean diet Made Easy Cookbook)
Dinner – Greek Stuffed Peppers with Orzo and Salad. The kids had plain orzo with salad and air fryer chicken strips.
Friday
(family movie night where we eat dinner while watching a movie all together)
Lunch – Mediterranean Pasta Salad with Quick Green Goddess Dressing
Dinner – Cheese & Crackers (cheese, crackers, fresh fruit, walnuts, olives, salami, homemade tzatziki with cucumbers and pita)
Saturday
Lunch – sandwiches with lunch meat, cheese, avocado, pickles, lettuce, onion, and sliced cucumber
Dinner – Baked Cod (using frozen cod from Trader Joe’s seasoned with salt, pepper, garlic and lemon juice), steamed white rice and roasted asparagus with parmesan cheese
Things We’ve Been Loving Lately
This is the area where we simply share a few things we’ve been loving lately. Whether it be a new recipe, product or ingredient or simply something for the home.
- Bob’s Red Mill Gluten Free 1-to-1 Baking Flour
- I still have to write a post explaining the issues behind the change but I’ve been trying to follow a gluten free diet for the past 3 months
- After a lot of trial and error, I finally discovered this gluten free flour and have loved using it in baked goods
- I had tried many, many others that didn’t have great end results and some that were bean based, making them very smelly after baking
- This brand is high quality and everything we’ve made with it so far has turned out great. We’ll be sharing a gluten free blueberry muffin recipe next week that uses this flour and is fantastic!
- Hiya Vitamins
- My kids eat a pretty well balanced diet but I had been looking for a daily vitamin to just help bump up the vitamin/mineral intake lately, especially since everyone at their school is out sick lately
- We’ve been using Hiya Vitamins for the last 6 months and I have been extremely happy with them
- I like that they are made with real ingredients and not filled with pectins and sugars. The kids love them and they are great at making the whole process very kid friendly. They send a glass (not plastic…hooray!) bottle with your first order, along with stickers for the kids to decorate their bottles.
- You can get 50% off your first order
- They can get a little costly so what we do is actually split one bottle between both kids and just have them take one every other day. I figure their diet helps fill in the other gaps/needs.
