Ingredients
1can15oz garbanzo beans (aka chickpeas)
2tbspolive oil
2-3tbspchile lime seasoning blendI use the trader joe's brand
1tspsaltdivided
1tspLime zest
Instructions
Preheat oven to 400 degrees
Line a baking sheet with parchment paper
Drain and rinse the garbanzo beans and then lay them on a paper towel and pat dry
Place chickpeas in a bowl and add 2 tbsp olive oil, 2 tbsp chile lime seasoning, 1/2 tsp salt
Combine well and lay in a single layer on the parchment lined baking sheet
Roast in the oven for a total of 30 minutes, flipping the chickpeas halfway through
Once finished, sprinkle with remaining 1/2 tsp salt and 1 tbsp chile lime seasoning and then return to oven (turn oven off though) and allow to cool completely in the oven (make sure it's off)
Finish with fresh lime zest once cooled and enjoy!
