Crunchy vs Chewy

Whenever I’m craving a snack (typically mid-afternoon), I either gravitate towards something chewy or crunchy. I’ll go for the chewy if I want something sweet – like candy or cookies.

But hands down, I’m all over the crunch factor when I want something more savory – like crackers, nuts or chips. There is just something so satisfying about a crunchy snack. Except if I’m somewhere quiet and have to listen to other people “crunch”…then it’s so annoying and not satisfying at all. I’m talking about you movie theater popcorn!

Simple Ingredients

The Recipe Redux challenged it’s members this month to share a healthy, crunchy snack that is perfect for the beach, back to school or even game day.

So I combined one of my favorite budget friendly pantry ingredients -chickpeas, with my newest Trader Joe’s obsession – chile lime seasoning. Have you guys tried this seasoning yet? It’s a blend of salt, lime and spice and it’s amazing!

Chickpeas are such a great ingredient to have on hand because they can be added to so many dishes. Soups, salads, mashed up and spread on sandwiches, thrown into stir fry or even roasted up for a savory snack.

They also are a great source of fiber, which can help with digestion, prevent certain types of cancer and even help with blood sugar control. Chickpeas also make a good source of protein, boasting 15 grams per cup.

The end result of these ingredients combining are these super crispy, Chile Lime Roasted Chickpeas.

Crunch is Key

Roasted chickpeas are really easy to make, but there are a few tricks to keep in mind in order to get a really good “crunch”-

    1. Line your baking sheet with parchment paper
    2. Flip the chickpeas halfway through baking to ensure both sides get roasted
    3. Allow the chickpeas to cool completely in the oven after they are done cooking

The result is a super crispy, crunchy sweet and salty chickpea that will definitely satisfy that afternoon crunch crave.

Ingredients

  • 1 can 15oz garbanzo beans (aka chickpeas)
  • 2 tbsp olive oil
  • 2-3 tbsp chile lime seasoning blend I use the trader joe's brand
  • 1 tsp salt divided
  • 1 tsp Lime zest

Instructions

  • Preheat oven to 400 degrees
  • Line a baking sheet with parchment paper
  • Drain and rinse the garbanzo beans and then lay them on a paper towel and pat dry
  • Place chickpeas in a bowl and add 2 tbsp olive oil, 2 tbsp chile lime seasoning, 1/2 tsp salt
  • Combine well and lay in a single layer on the parchment lined baking sheet
  • Roast in the oven for a total of 30 minutes, flipping the chickpeas halfway through
  • Once finished, sprinkle with remaining 1/2 tsp salt and 1 tbsp chile lime seasoning and then return to oven (turn oven off though) and allow to cool completely in the oven (make sure it's off)
  • Finish with fresh lime zest once cooled and enjoy!
