Curry Egg Salad (no mayo)

A flavorful twist on an old classic, this mayo free Curry Egg Salad recipe is inspired by the Mediterranean Diet and makes the perfect, healthy lunch.

Ingredients

  • 6 eggs, hardboiled shells removed, eggs chopped
  • 3 stalks celery diced
  • 1 cup greek yogurt, plain
  • 2-3 tbsp curry powder
  • salt and pepper to taste
  • 1 tsp paprika
  • 1 tbsp fresh chives chopped

Instructions

  • Place the chopped hardboiled eggs and diced celery in a large bowl
  • In a small bowl, combine the greek yogurt and curry powder. Mix until well combined
  • Add the curry greek yogurt mixture to the large bowl with the eggs and celery
  • Stir to combine well, taste and season with salt and pepper as needed
  • Add paprika and garnish with chopped chives
