I absolutely love summertime. Besides having an unwavering love of warm weather and flip flops, summer is a favorite season of mine for entertaining. Hosting outdoor dinner parties or just spontaneously having people over for wine and appetizers on warm summer evenings is so much fun.
Cheese & Crackers used to be my go-to for an easy entertaining appetizer. However, cheese isn’t exactly a very healthy ingredient and doesn’t exactly scream “summer”.
So when Breton Crackers sent me a sample of their new Artisanal Sweet Potato & Ancient Grains crackers with the challenge of creating a summer friendly appetizer, I jumped at the chance to create a new go-to appetizer.
Let me start by saying these Sweet Potato & Ancient Grains crackers are amazing! The cracker is tender and crisp in texture, making it a great base for an easy, summer friendly appetizer. They are also delicious! The crackers are full of flavor and made with ancient grains like quinoa and rye, with sweet potato pieces baked right in.
To keep it simple, light, and refreshing I wanted to use fresh flavors and ingredients we tend to have on hand. So, I actually went into the garden for inspiration. I picked fresh cucumbers, parsley and garlic to create the Cucumber Herb Relish. I added a little olive oil, salt, pepper and cherry tomatoes and placed it on top of some creamy, ripe avocado slices for the perfect cracker bite!
These Crackers with Cucumber Relish are full of flavor and so simple to make! In less than 5 minutes, you can have the perfect summer friendly appetizer to offer guests for a special event, dinner party or just spontaneous snack.
- Breton Artisanal Sweet Potato & Ancient Grains Crackers
- 1 avocado, thinly sliced
- 1 cucumber, diced
- ½ cup cherry tomatoes, quartered
- 2 tbsp fresh parsley, finely chopped
- 1 clove garlic, minced
- 1 tbsp olive oil
- salt & pepper, to taste
- In a small bowl, combine the cucumber, cherry tomatoes, parsley, and olive oil. Season with salt and pepper as needed
- Place thinly sliced avocado on each cracker and top with spoonful of cucumber relish
