Sunday Snack Prep

[highlight]Sharing my the 5 items that I make on Sunday to have for quick snacks or meals during the week.[/highlight]


Since I work from home, the kids and I tend to eat lunch at home during the week. This means I don’t really prep too many meals on Sunday because I don’t have to pack a lunch to take to work or school.

However, I have found that having a few key items snacks prepped and ready to grab for last minute snacks or quick meals is key to keeping me on track during the week. Even with the best of intentions, I have found that schedules easily change and sometimes I don’t have the time to prep lunch before my kids have a meltdown and demand food, or dinner gets pushed back and I need to grab a quick snack to tide me over until it’s ready.

These are my 5 Sunday Snack Prep items I make every week to have ready to grab at a moment’s notice:

  1. Hard Boiled Eggs
    • I hard boil 5 eggs each week
    • 1 egg is just 75 calories and 6 grams of protein, making them a healthy choice for a snack or part of a meal
    • They are quick and can even be taken on the go
    • We usually eat them as a stand alone snack, add them to salads for a bit of extra protein, or combine them with some canned tuna & avocado for a quick and healthy lunch
  2. Veggies with Hummus
    • On Sunday,I’ll whip up a batch of hummus and chop up some carrot sticks, celery, and bell peppers
      to have ready to go for quick snacks during the week
    • I’ve never met a hummus I didn’t like but this Spicy Harissa Hummus and Classic Hummus are my current favorites
  3. Healthy Trail Mix
    • I posted a couple weeks ago about this Healthy Trail Mix, and I’m still all about it!
    • I make a big batch (even bigger now that the kids and hubby are hooked on it) on Sundays to grab a little during the week
    • Easy to make, delicious to eat and full of heart healthy fats and proteins, it’s the perfect snack
  4. Beef Jerky
    • I made beef jerky for the first time while doing the 21 Day Sugar Detox and got hooked! It’s so good and easy to make, even if you don’t have a dehydrator (which I don’t)
    • I make mine in the oven and love the recipe from the 21 Day Sugar Detox Cookbook but also love this recipe from The Domestic Man (paleo, gluten free beef jerky)
    • A great, quick source of protein the jerky comes out so flavorful and because you are cooking it yourself, you control the sodium and sugar levels (both the recipes I linked to don’t use any extra sugars)
  5. Balela
    • A middle eastern inspired bean salad that is full of fresh flavors and herbs, it’s so addicting!
    • I usually make a big batch on Sundays using this recipe, but in a pinch, the pre-made one from Trader Joe’s is so good!
    • The beans provide a great source of fiber and some protein, it’s a great snack or addition to lunch
