Mediterranean Diet Inspired Recipes
This recipe was inspired by a dish I had at a local restaurant one morning during a mom coffee date. It was so simple but really flavorful and I couldn’t wait to try making my own at home.
While this dish is not really a “Mediterranean” dish, I think it fits into the Mediterranean Diet Guidelines perfectly.

Our Love of Bitchin’ Sauce
The star ingredient of these breakfast tacos is definitely the bitchin’ sauce. It’s so flavorful and with just the right level of kick! We use the chipotle flavored one in this recipe but they have a whole line of different flavors if heat isn’t your thing.
We get our Bitchin’ Sauce from Safeway but they are sold many other places as well.
I love the ingredient list for this sauce and think it’s a great example of choosing prepared foods that aren’t filled with a lot of preservatives or added sugars, etc. This sauce contains – water, grapeseed oil, lemon juice, soy sauce, nutritional yeast, garlic, chipotles, vinegar, tomato, smoked paprika, sea salt and onion powder.
Spicy Breakfast Taco Tips
These breakfast tacos come together really quickly and you can always add your own toppings.
Some tips for making this recipe –
- I prefer the small, corn street taco size tortillas but you can use whatever tortilla you prefer. I like to lightly char mine over the gas burner but that is an optional step
- The micro greens can easily be replaced with arugula, spinach, or sprouts
- Salsa would also make a great addition
- Have everything prepped before you start scrambling your eggs because they cook quickly
- Have extra napkins ready! These tacos are delicious but very messy
Spicy Breakfast Tacos
Ingredients
- 1 tbsp olive oil
- 3 egg, cracked and whisked in bowl
- 3 corn tortillas, street taco size
- 1 small tomato, sliced
- 1/2 avocado, sliced
- 1/4 cup microgreens
- 3 tbsp chipotle bitchin' sauce
- Optional Garnish – fresh chives
Instructions
- In a pan over medium heat, add your olive oil and then whisked eggs. Cook until fluffy and scrambled, about 2-3 minutes
- Lightly char tortillas over stove for 30 seconds each side
- Add micro greens on bottom of each tortilla, then add scrambled eggs, slice of tomato and avocado
- Drizzle about 1 tablespoon bitchin' sauce over each taco and garnish with fresh chives
