Arugula Tuna Wrap Recipe
This is one of my favorite lunch recipes. It’s so simple but tastes like it took a long list of ingredients to prepare. The tuna and yogurt mixture can be made in advance for easy weekday lunches.
You can also change out the tuna with shredded chicken or canned salmon as well.
Arugula Tuna Wrap
Ingredients
- 2 cups arugula, divided
- 1/2 cup Italian parsley, chopped
- 2 each scallions, sliced
- 1 clove garlic, chopped
- 1 cup Greek Yogurt, plain
- 1 tsp white wine vinegar
- 1 tsp fresh lemon juice
- 1/4 tsp salt
- 1/4 tsp pepper
- 8 oz canned tuna
- 2 whole wheat tortillas
Instructions
- In a food processor, combine 1 cup arugula, the parsley, scallions, garlic, Greek Yogurt, white wine vinegar, lemon juice, salt and pepper. Puree until well combined and the herbs are finely chopped. The mixture will be a bit chunky and that's perfect.
- Pour the mixture into a mixing bowl and add the tuna. Mix until well combined.
- To prepare the wrap, divide the remaining arugula and place it down the center of each tortilla. Spoon the tuna mixture in the center of both tortillas. Wrap the tortillas and cut each one in half to serve.
