No surprise to me since these popsicles are so dang good! Just a few simple ingredients make these Blueberry Yogurt Popsicles a creamy and naturally sweet treat.

Simple Ingredients

The fact that they are made with yogurt and fresh fruit even makes it appropriate to serve for breakfast. I’m sure you can just imagine my daughter and son’s face when I gave them a popsicle for breakfast. You could even add a little granola in the bottom of the popsicle while making them for an even more filling breakfast popsicle.

They remind me of this Swedish Blueberry Soup recipe I posted awhile ago, but in popsicle form. And who doesn’t love a good popsicle?

Now is a great time to make these Blueberry Yogurt Popsicles and take advantage of the fresh, summer berries that are still in season.

Blueberry Yogurt Popsicles

Creamy greek yogurt combines with a simple blueberry compote to create these tangy and naturally sweetened Blueberry Yogurt Popsicles

Ingredients

  • 32 oz plain greek yogurt
  • 1 cup fresh blueberries
  • 1/2 cup water
  • 1/2 lemon juiced
  • 1 tbsp honey

Instructions

  • In a small saucepan, add the blueberries, water, lemon juice and honey
  • Allow to simmer until blueberries burst and mixture becomes a thick syrup-like compote (about 15-20 min)
  • Once compote is thick, remove from heat and allow to cool completely
  • Fill each popsicle mold with 2 scoops yogurt, followed by a scoop of blueberry compote
  • Continue alternating between yogurt and compote until each popsicle mold is full
  • Cover and freeze until set, about 4-5 hours
