School’s Out for Summer
Just one more day until my kids are out of school for summer! While I absolutely love summer, I’m a tad bit melancholy about the end of the school year.
I feel like Sophie’s first year of kindergarten just flew! She loved it but now that she’s headed into first grade. Not to mention that my little guy graduates preschool and is off to the big kid elementary school next year.
Cue the tears.
Simple Summer Snacks
Although I will not miss packing school lunches every night, the idea of being asked for a snack 78 times a day is daunting.
That’s why I am so in love with California Lavash’s new Mini Lavash! The same great taste, flavor and natural ingredients as their original flatbreads, just made in smaller form. Making them perfect for sandwiches, roll ups, toast toppings and much more.

4 Mini Lavash Snack Ideas
Each of these recipe ideas are simple summer snacks that are easy to create and a tested family favorite at my house.
1. Peanut Butter & Jelly Lavash
A classic favorite for good reason! You can’t go wrong with PB&J and this one is simple and delicious.
To create – simply spread a mini lavash with peanut butter (or nut butter) of your choosing and jam/jelly. I used this 3 ingredient recipe for Strawberry Chia Seed Jam and was blown away!
2. Ricotta, Tomato & Basil Lavash Toast
Summer just isn’t summer without garden vine tomatoes and fresh basil. Combine those with creamy ricotta and you have yourself an amazing snack, lunch or even party appetizer.
- Preheat oven to 400 degrees
- Place desired number of mini lavash on a baking sheet and drizzle with olive oil
- Bake in oven for 3-5 minutes, until golden brown
- Top with ricotta, sliced tomatoes, basil, salt and pepper
3. Banana Sushi Rolls
A fun and festive afternoon snack idea that kids will get a kick out of.
To prepare – spread peanut butter oven the top of a mini lavash. Place a peeled banana at one end and roll so mini lavash covers banana. Slice into 1/2 inch pieces and lay on serving plate. Drizzle with honey, top with desired toppings – chia seeds, rice cereal, granola, shredded coconut, or cinnamon.
4. Mini Fruit Pizzas
This is a fun, make your own snack activity that the kids can get involved in. Sort of like a Build Your Own Fruit Pizza station.
Slice and prepare assorted fruit toppings like strawberries, blueberries, blackberries, raspberries, banana, kiwi, oranges, etc.
Then simply have the kids top their mini lavash with greek yogurt, add their fruits of choice, then drizzle with honey and garnish with fresh mint (if desired).
